In my opinion, don't use WAV because (a) there are no standards for tagging, and (b) uncompressed lossless is a waste of disk space and bandwidth. I understand that AIFF has decent tagging, so that gets rid of drawback (a), but leaves you with drawback (b).
If you really don't want to keep two formats, do want lossless files, and do want to use iTunes, then Apple Lossless is probably the way to go. It will sound identical to WAV, AIFF, or FLAC. But I also strongly encourage you to think again about keeping two formats. It doesn't really involve a lot of extra steps, and those lossless files are wasted on iPods and such. There are various tools available that make creating a parallel library of FLACs and MP3s very easy.
