Just to add my tuppence worth ... I've just been through the same thought process and am currently re-ripping my CDs to FLAC (see http://forums.slimdevices.com/showthread.php?t=79122).
My workflow is: 1- use dbPowearmp to rip the files to FLAC. 2- converted the FLAC files to AAC using dbPoweramp into my iTunes directory on the PC 3 - import the AACs into iTunes And I end up with a FLAC archive on my PC which I mirror onto my NAS on which I run SBS. And I have an iTunes library on my PC for keeping my iPhone up to date. This suits me as my iTunes usage is not of audiophile quality - just for car/ headphone usage.
