If you are using mp3tag there is a very useful function that extracts metadata from the folder and file names and writes it to the tags, or writes folder and file names from the tags. At least it's useful if your folder and file names are well-organized.
The tricky part is there are infinite number of ways someone can put album, artist, tracknumber, track name, etc into a file name. So, assuming the folder and file naming are at least consistent, you can experiment. mp3tag allows you customize the translation from folder/file name to tags data, and provides a "preview" function to be sure that things come out the way you expect. If all of your artists are named FLAC then I would guess your mapping of file/folder names to tags isn't right. Or maybe you're not using mp3tag after all, in which case I have no idea what the problem is.
