Do you perhaps have other tags like Composer set? Are there ArtistSort tags there?
I'm honestly not sure how the server software would deal with tracks with no Artist or AlbumArtist field. For instance, I'm not sure if there would be an "unknown" entry or if it will just not show it at all. Keep in mind though that the server has settings for including other rolls like composer or performer in the artist menu, and having those fields could be messing things up. Last, you also may want to make sure that you aren't having problems because you have multiple types of tags in your files (e.g. ID3v1 and ID3v2). Both may be present but not necessarily updating in tag editing software.
