I also keep updating tags. Aside from the occasional typo that JJZolx mentioned, I also add genres and generally refine and rearrange things. Also there is a lot of artwork that I feel is too low resolution, so I'm still finding better or finally getting around to scanning the CD inserts.
I keep my music in three places - media disk in my PC, on my server and on an external drive (eSATA for the win!). The point others have made about keeping the external drive off-site are good - I may start doing that. I make changes and rip new CDs on my local PC and then copy them to my server over the network - having a hardwired gigabit network helps here. In my case, most tag changes are painless to copy, since the bulk of my library is FLAC image + cue. And a cue sheet is just a few K even with ReplayGain. What hurts is updating artwork, since I can't just point at the artwork from the cue sheet, and the only reliable method I've found is to embed the artwork into the FLAC image. All my drives are NTFS, so I can move them between machines if I need. >From Windows, you could make a batch script using robocopy to sync your drives.
