Delta 1010 just works with no messing (I have 2 of them and 2 delta 66s floating around on various Rivendell machines). As far as I'm aware all the Deltas work fine, I also used an Echo Gina 3G with no problems (and various motherboard built in cards). I have no idea about the touch screen though I'm afraid.
Some things to help with the delta, when you're in ubuntu open up the software centre and search for Envy or alsa-tools-gui. You get some nice graphical tools for messing with your sound card levels and other bits and bobs. I found it easier to understand as it had more sensible labels than the console based alsamixer (although to be fair thats not rocket science either).
