For the beneift of the public mailing list:

It seems to be that a cronjob is created (perhaps by cPanel/WHM ?) under 
'/etc/cron.daily/rkhunter' which is a fairly long script to update 
rkhunter, scan and email a daily report.
This cronjob script also references a configuration under 
'/etc/sysconfig/rkhunter' - within which there is a 
'MAILTO:root@localhost' defined.

Commenting out 'MAILTO:root@localhost' seems to fix the issue with 
rkhunter not reading the email address that is defined under 
'/etc/rkhunter.conf'
