After a few hours of digging I found another package that does virtually everything I was looking for:
streamripper - it was even listed in the Ubuntu repositories along with kstreamripper to give
it a gui. Worked fairly well - I set it up to record 8 hours of a station and it faithfully did that,
while also breaking the individual recordings into separate mp3 files complete with the artist
name and the name of the song. Very cool. I will also check out audacity.

Audio editing is pretty easy for the most part, and can be fun. If you decide to use Audacity, let me know and i can give you a few pointers.
