Because the ones we use are from LilyPond of years ago, and who knows how they 
might have changed.  Notes getting drawn several pixels away from their stems, 
flags winding up in the wrong place, etc.  It could make a complete mess of 
things.  That's why we ship with fonts that are a known quantity.
