Additional headers can only come in via specific configurations (RTmac & Co.). They make the packets alien for any node not aware of RTnet, but there is nothing cut off from standard UDP/IP frames. Have you checked the website and the wiki as well? Keep in mind that real-time is in general no trivial topic anyway. It's not a switch you flip or an addition package you install.
