You can also find the non shrink joint compound at any of the home 
centers (Home Depot, Lowes, etc.), at paint stores (Sherwin-
Williams, Kelly Moore, and others), and at most full line 
lumberyards.  The product is pre-mixed and packaged in a 40 lb. box.  
If purchased in this manner dump the contents into a 5 gallon bucket 
with a tight fitting lid to keep it from drying out.  Another product 
to consider is what is known as "15 minute mud".  This is a dry 
product sold at paint stores.  It is a fast setting joint compound 
which can be mixed in small quantities as needed.  The caution noted 
by Billy Click is valid as the sanding dust contains free silica.  
Prolonged exposure to this dust can result in silicosis.  Using a wet 
sponge to sand these products cannot be overemphasized.
