Hi Jerry;
There are a couple of options for ca 1900 passenger cars. A long-gone company
named "Kinsman" made wood kits for such cars, basically S scaled versions of
the old Northeastern HO kits. They were available in different types (coach,
combine, etc) and as either open or closed vestibule.
After that company went away, 'S'cenery Unlimited sold resin versions of the
same cars. 'S'cenery is still around, but sold out of the cars and dropped them
some time ago. Both series of kits show up on the used market from time to time.
The only in-production option I can think of is to buy the American Models
"heavyweight" cars, which are 72 foot steel cars with clerestory roofs; sand
off the rivets on the sides and scribe them to represent wood sheathing. For
even earlier style cars, some folks have cut down the Bachmann On30 passenger
cars. I can't say if the results would be acceptable to you in the latter case.

want to build a couple of 'scale'
passenger and/or pullman cars. Craftsman kits are OK. RTR is OK. Does
anybody make such a thing. I looked at BTS and Labell kits, but no
passenger cars.
