I purchased a cheepie thumb sized camera typically used as a 'nanny'
camera. I put it in a gondola with the battery. during one of our
meeting my friends were surprised at the scenes we were seeing. Of
course pushing a gondola around in front of the train wouldn't suffice
for paying guests. I would think using an American Models PA, FA, SD-60
or FP-7 would be the best choice to mount the camera lens. These
engines have the most room to hide the camera inside. However, if one
were to gut the insides, any engine would do. At that point cutting a
'hatch' in the roof would make changing out the battery easy also, as
they don't last very long.
My local hobby shop has a similar type system that they demonstrated for
some time, but I don't recall the brand. It might have used track power
which would eliminate the battery problem but certainly introduce static
and pickup problems. I would think that there would be numerous on-line
sources for other cameras.
