Only seed corn is detasseled. Generally  3 or 4 rows have their  tassels 
removed with a row or two left with their tassels. This is done just  before 
the corn germinates and is how the seed corn is hybridized.
 
Sweet corn is not detasseled, the tassels are needed to produce the  
kernels. Tassels produce the pollen, therefore are a sex organ of the  corn.
