On SHS or DPH cars, a #1-72 screw will work, but you have drill and tap the mounting hole in the bolster for it. I have had few if any centering problems. On a couple of couplers, I thinned the thickness of the coupler shank with a file. I can't say Walthers couplers give me any more problems in this respect than Kadees. Sometimes things just don't work like they're supposed to and you have to go to Plan B. Like I said before, these couplers are compatible with the various Kadee coupler mounting systems, and I have successfully used them in that regard. As far as the 1/16" that the coupler box extends beyond the ends of SHS cars, if Kadee had designed the On3/SHS coupler to use the universal #5 coupler pocket, this would not be an issue. Since they didn't, use the Walthers #920-6005 Short Shank version couplers or I've even used the old Kadee "button" mounts on occasion If all else fails, Improvi"S"e with the KISS philosophy. That's what S scale is all about, making something work when the "experts" contend it won't.
