My reasoning was converting the On3/On30 trucks to S standard gauge not 3'.
I guess I should have been clearer.

You got it a bit sideways.
On30 uses H0 gauge which is 42" in S.  So to use On30 trucks in Sn3  
you must narrow them.
A better idea might be Rio Grande Models.  The broader trucks are  
easily modified by a new bolster.  Also I think PSC makes a few.
