Hi Annette, Thanks for the wishes. Seems it's been a looong time since
you've seen cashews being processed in Goa! There are various
gadgets/machinery now available here for juice extraction. Definitely no
need to stamp & stomp ;-) At the recently held Konkan Fruit Festival there
were on display manual/electric machines for bulk chopping of cashew, a
screw press - to extract juice, even one to de-seed kokum (binda)

btw, even if our recipe & 'secrets' were revealed, I doubt even half % of
those reading it would go through the considerable labour (starting with
collecting the fruit) & processes needed to produce good wine. It's no joke
making wine, honestly. In any case no revelations forthcoming but just one
advice - if you put in the effort, mother nature helps!
