The server is really just a host for the DB, and for me, Linux does that job better for less $ than Windows. I understand that SAP DB is tested under SuSE 7.3, however SuSE 8.x works fine for me, and I expect that RedHat 8.x would be fine too. As previously stated, you don't get a DBMGUI for Linux, but you can run it on a Windows box talking to the Linux server. The pros as I see them are lower initial cost, and lower ongoing costs. Things like firewalling are easy, and you don't need to worry so much about viruses and so on. Stability and manageability are top rate too. The con is probably that it's not Windows (but don't let that put you off :-). It's really not hard getting a system up and running, but in the unlikely event of something breaking later, you may find it hard going unless you can find help online, or find a local Linux guru - neither of which is difficult. In that situation, reliability is key, so a Linux (or any *nix) system is a good choice (security helps too, students are good hackers ;-). As it has to be managed remotely, and you don't sound too familiar with Linux, perhaps RedHat would be a good choice as you can use the RedHat network service, which lets you perform remote software updates through the web. Alternatively, you can login remotely via secure shell to do any command line admin tasks with any of the Linux versions. If you have any general Linux questions, feel free to email me off-list.
