Liquidsoap should tell you if you put the wrong string. I believe
UTF-8 is correct. As for icecast, you'd have to check with libxml2 but
I believe UTF-8 is correct too.

I have no clue as why the whole thing does not work. If you confirm
that you still have an issue, then could you please send us a minimal
script && song and extract of configuration files so we can see if we
can reproduce?
