Hi, A first, quick answer: at first sight, it looks like mean() is what you need, but it is not as flexible as audio_to_stereo() because it doesn't accept an input with a variable number of channels.
It looks like there is a valid feature request here. In the meantime, an alternative is to convert everything to stereo using audio_to_stereo and then back to mono with mean.
