I have seen other people try it, probably because it's the way to take back a move on a physical board.

However, for the scoresheets of my games, my preferred method was to just enter the moves with the keyboard. Using the mouse, I have to mentally convert the coordinates and visualize the move, whereas simply transcribing the scoresheet was faster. Once I had entered the game, I used the mouse to analyze it.
