Chris, I have experienced mongoid and trying to pull binary images out of mongo. In my experience, don't. Or better yet, do it once and then stop doing it. Performance and stability were not great with gridfs. I was using spreadsheets (XLS and XLSX) so encoding was trickier, thus your millage may vary.
This plugin works https://github.com/archSeer/paperclip-gridfs You can also do it with carrierwave, but I didn't try that.
