We put it in job title and then add it to the incident-people view for reporting. The one downside is it is not stored in the incident so if affiliation changes the data may not entirely be accurate. Yes, in 7.5 we substituted faculty, staff, student, etc for the default menu values on CTM:People. There may be other places where you need to change this; just look through the ctm:people forms.
