I make my vinha da Alhos


Fresh ground red pepper,
for meat
I use Red Wine or Vinegar
for Chicken and pork
i use White white or white vinegar (diluted with water)
I sprinkle salt then mixed the meat in it i never measure
When i use Vinegar i dilute with water, 90% of the times.I use wine
(a olho) depends how much i'm making I mix the meats with all those
ingredients cover put in the fridge for the next day to cook.

I don't cook Fish, I bye it already made :>)

In Hawaii we usually use aku which is a tuna fish.  It will taste good with
whatever fish you use.  This is a recipe that I use for Pickle Onions,

 

1 ΒΌ cup vinegar

2 cups water

3 tsp. Hawaiian salt also called rock salt

 

If you want your pickles really vinegary you can add more vinegar

We usually leave it out overnight so the salt really melts and put it in the
refrigerator the next day.

We also add in pipinola with the onions and bell peppers.
