In Hawaii we usually use aku which is a tuna fish. It will taste good with whatever fish you use. This is a recipe that I use for Pickle Onions,
1 ΒΌ cup vinegar 2 cups water 3 tsp. Hawaiian salt also called rock salt If you want your pickles really vinegary you can add more vinegar We usually leave it out overnight so the salt really melts and put it in the refrigerator the next day. We also add in pipinola with the onions and bell peppers. Hope this helps.
