[CAKE-RECIPE] Rhubarb Bread

Rhubarb Bread
 
2 cups flour
1 1/4 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1 egg, white
2 whole eggs
1 cup vegetable oil
1 1/4 cups dark brown sugar
2 teaspoons vanilla
2 1/2 cups fresh ore 3 cups frozen rhubarb, diced
 
Preheat oven to 350 degrees.
Combine flours, baking soda, baking powder, salt,
cinnamon, allspice and nutmeg.
In a large mixing bowl, combine the egg white, eggs,
oil, brown sugar, and vanilla.
Beat the mixture until fluffy. Stir in the flour
mixture. Stir in the rhubarb. Divide the batter
between 2 greased 9 x 5 x 3-inch loaf pans.
Bake 50 minutes.

[CAKE-RECIPE] Crockpot Steamed Molasses Bread

Crockpot Steamed Molasses Bread
 
2 cup cereal, all bran
2 cup flour, whole wheat
2 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
1 cup raisins
add dashes of cinnamon, cardamom and nutmeg
1 egg
1 3/4 cup sour milk or 1 3/4 cup buttermilk
1/2 cup molasses, dark
 
In a medium bowl, combine bran, flour, baking powder,
salt,spices, baking
soda and raisins. In another bowl, combine milk, egg
and molassses.
Blend into dry ingredients. Do not overbeat.
Pour into greased and floured 8-cup mold or can. Cover
with foil
and tie. Place on rack in slow cooker and pour 2 cups
hot water
around can.
Cover pot and cook on high for 3 to 4 hours. Turn
bread out on
cooling rack and serve warm or cool.
Yields 8 servings.

Crumb Topped Pumpkin Squares

1 box yellow cake mix
1 16oz. can pumpkin
3 eggs
½ C sour cream
½ C soft butter

Crumb topping
1/3 C butter
1 C brown sugar
2 T cinnamon

Blend all the cake mix ingredients together and layer
half the mix in a
9x13"cake pan. Add half the crumbs then the last of
the batter and end with
crumbs on top. Bake at 350* for 50 - 55 min. in a 9x13
pan.

Old Fasshioned Pineapple Upside Down Cake

 1/2 c. butter or margarine, softened
3/4 c. brown sugar, packed
1 can (8 oz.) sliced pineapple,
   drained
9 maraschino cherries
3 eggs, separated
1 c. sugar
1 c. all-purpose flour
1/4 tsp. salt
1/4 c. plus 1 tbsp. water
1 tsp. vanilla extract

  Cream butter; gradually add brown sugar, beating
until light and fluffy.  Spread creamed mixture evenly
in a 9 inch cast iron skillet. Arrange pineapple and
cherries evenly over mixture.  Beat egg yolks until
thick and lemon colored.  Gradually add sugar, beating
well.  Combine flour and salt; add to yolk mixture
alternating with water, stirring well after each
addition.  Stir in vanilla.  Beat egg whites (at room
temperature) until stiff peaks form; fold into batter.
 Spoon batter evenly over pineapple slices in skillet.
 Bake at 350 degrees for 50 minutes or until wooden
pick inserted in center comes out clean.  Cool 30
minutes in pan and invert cake onto serving plate. One
9 inch cake.

on the Internet.  One stick of butter would be 1.4
pound but I don't know the gram conversion.

Flan Cake

5 eggs
1 tsp. baking powder
1/2 tsp. salt
1 c. sugar
1 c. flour
1 tsp. vanilla

  Beat together eggs, baking powder and salt.  Add
sugar, flour and vanilla.  Beat in blender if you
like.  Pour in flan pan.  Bake 10 to 13 minutes in 400
degree oven. Top with fruit and glaze.

2 c. fresh or frozen unsweetened
   blackberries
1 1/2 c. sifted powdered sugar
1 tbsp. milk

 In a mixer bowl cream together sugar and butter.  Add
eggs, one at a time, beating well after each.  Sift
together flour, baking powder, baking soda and salt. 
Combine buttermilk and vanilla.  Add the dry
ingredients and the buttermilk mixture alternately to
the creamed mixture, beating after each addition. 
Fold in fresh or frozen blackberries.  Spread batter
into a greased and floured 10" fluted tube pan.  Bake
in a 350 degree oven for 1 1/4 hours.  Cool 10 minutes
in pan.  Invert on wire rack; remove pan.  Cool
completely.  Combine powdered sugar and enough milk to
make of drizzling consistency.  Drizzle the powdered
sugar mixture over cake.  Makes 12 to 14 servings.

Chocolate Cream Cheese Cookies

1/4 c. marg.
1 (8 oz.) pkg. cream cheese
1 egg
1/4 tsp. vanilla
1 pkg. Duncan Hines Cake Mix (white)
1 (8 oz.) pkg. chocolate chips
1/4 c. ground nuts

 Cream oleo and cheese until light and fluffy.  Beat
in egg and vanilla and half the cake mix until smooth.
 Stir in remaining cake mix.  Add chips and nuts. 
Bake at 375 degrees for 10 to 12 minutes.

Old Fashioned Blackberry Cake

1 c. blackberries
1 c. blackberry juice
2 c. sugar
2 c. shortening
3 eggs
1/2 tsp. baking soda
1 tsp. cloves
1 tsp. allspice
Pinch of salt
Flour until thick

 Mix all ingredients together with a mixer like any
other cake.  You can add nuts and raisins if desired. 
Bake in a tube pan at 450 degrees until done.  Use
toothpick to test.

Easy Pear-Strawberry Trifle 
   
  2 pared, cored, and thinly sliced Anjou or Bosc pears 
2 tablespoons lemon juice 
2 cups coarsely chopped strawberries 
2 tablespoons almond-flavored liqueur or 1/2 teaspoon almond extract may be 
substituted
2 tablespoons orange juice 
2 tablespoons honey 
1/2 9 inch angel food cake, cut to 1-inch cubes 
3 cups vanilla or lemon flavored yogurt 
1 cup diced fresh or canned pineapple, drained 
Garnish: pear slices and mint sprigs 
   
  Toss pears in lemon juice and strawberries in liqueur. Combine orange juice 
and honey, mix well. Layer a deep 2 to 2 1/2 quart glass bowl in the following 
order: 1/3 of cake sprinkled with 1 tablespoon orange juice mixture, 1 cup 
yogurt, 1 cup pear slices, 1 cup strawberries, and 1/2 cup pineapple, repeat. 
Layer remaining cake, sprinkle with remaining range juice mixture and spread 1 
cup yogurt over top. Cover with plastic wrap and refrigerate 1 to 4 hours 
before serving. Garnish with pear slices and mint just before serving. 
Makes 4 to 6 servings.

I have a pan that fits inside another pan and it makes it checkered.  When I 
make a swirl cake I pull out some of the white batter and I add a little melted 
chocolate, after I fill the pans I pour some of the chocolate batter in the 
center and drag a toothpick through it.

cake. there was a picture of a cake I've seen in the store that was a 
checkered type cake, when its cut the inside was small squares inside 
the cake, it hade chocolate, and Vanilla. it was cool. But I didn't 
have the time to but the recipe, so I was wondering if anyone hade any 
idea how to make a cake with chocolate and vanilla squares in the 
middle, or if you don't have a clue, how do you make a swirl cake?

[CAKE-RECIPE] 2 Layer Blackberry Jam Cake

2 Layer Blackberry Jam Cake
   
   
  1 1/2 cups butter
3 cups white sugar
5 eggs
1 1/2 teaspoons baking soda
4 1/2 cups all-purpose flour
1 cup sour cream
1 1/2 cups blackberry preserves
1 1/2 cups chopped pecans
1 1/2 cups shredded coconut
1 1/2 cups raisins
butter cream icing
additional blackberries, to garnish
   
   
  Filling
   
 
1 cup softened cream cheese
1/2 cup blackberry preserves
2 cups fresh blackberries
   
Preheat oven to 350°F (175 degrees C). Lightly grease two 10 inch round 
cake pans and set aside.   Cream together the butter and sugar. Add eggs 
separately, beating well after each.   Sift together soda and flour; add 
alternately with sour cream to creamed mixture. Mix well.   Add jam, pecans, 
coconut and raisins. Mix well and pour into prepared pans.   Bake for 35 
minutes or until toothpick inserted in center comes out clean. Remove cakes 
from pans and allow to cool completely.   In a small bowl, combine all filling 
ingredients except the fresh berries.   Spread the filling onto the top of one 
cake and arrange the fresh berries on top. Place the other cake on top and 
press down lightly, making sure the cakes are “stuck” together.   Frost the 
cake with the butter cream frosting and arrange the fresh berries on top, to 
serve.

[CAKE-RECIPE] Chocolate Lava Muffins (my coworker gave me this recipe, they are good)

Chocolate Lava Muffins


8 ounces semisweet chocolate chips 
1 stick butter  or margarine
1/2 teaspoon vanilla 
1/2 cup sugar 
3 tablespoons flour 
1/4 teaspoon salt 
4 eggs 
Spray to coat muffin tin 
1 tablespoon cocoa powder 
1 cup vanilla ice cream 
1 teaspoon espresso powder 

Preheat oven to 375 degrees. Place a small metal bowl
over a saucepan with simmering water. Melt the
chocolate and butter in the bowl. Stir in vanilla. In
a large mixing bowl, combine sugar, flour and salt.
Sift these into the chocolate and mix well with
electric hand mixer. Add eggs one at time, fully
incorporating each egg before adding the next. Beat at
high until batter is creamy and lightens in color,
approximately 4 minutes. Chill mixture. Coat the top
and each cup of the muffin tin with butter. Dust with
the cocoa powder and shake out excess. Spoon mixture
into pan using a 4-ounce scoop or ladle. Bake for 10
to 11 minutes. Outsides should be cake-like and
centers should be gooey. While muffins are in oven,
melt the ice cream in a small saucepan. Stir in the
espresso powder. Serve over warm muffins. Yield: 1
dozen

[CAKE-RECIPE] Tomato Soup Quick Bread (coworker gave this to me, yummy bread)

 Tomato Soup Quick Bread

1/4 c Shortening
1 c Sugar
1 cn Tomato soup (10 oz)
1 ts Baking soda
1 c Raisin
1/2 c Nuts
2 c Flour
1/4 ts Cloves
1 ts Cinnamon
1 ts Salt
1/4 ts Nutmeg

Cream shortening and sugar. Mix soda into soup. Sift dry
ingredients and add to creamed mix alternately with soup mixture.
Scrape into a 9 x 5 loaf pan and bake at 350 for approx 1 hour.
