[CnD] Cherry Pie Muffins

Cherry Pie Muffins
Sweet and hearty, with a tender body and flaky almond-scented streusel topping. 
The addition of almond milk and coconut oil makes these muffins particularly 
flavorful. Fresh cherries are a must when making these muffins. I suppose dried 
cherries, or cherry pie filling could work if they absolutely must, but the 
soft and pure flavor of fresh cherries in these muffins is unrivaled. Worth 
every gad-blum cherry you’ll pit before stirring together the batter.


For the muffins:
1 egg
1/2 cup coconut oil
1/4 cup honey
1/2 teaspoon baking powder
3/4 cup whole wheat flour
1/2 teaspoon salt
1/4 cup almond milk
2 cups fresh cherries, pitted  halved

For the streusel:
1/4 cup almond flour
2 tablespoons oatmeal
2 tablespoons powdered sugar
2 teaspoons honey
1 tablespoon coconut oil
*
For the latticed drizzle:
1/2 cup powdered sugar
1/2 teaspoon almond extract
1 to 3 tablespoons milk 

In a large bowl. beat together all muffin ingredients until well mixed. (If you 
are baking at low altitudes, increase the baking powder by 1/2 tsp.) Spoon 
mixed batter into a muffin tin prepared with cupcake wrappers. In a medium 
bowl, use a fork to combine all ingredients until a coarse crumb results. 
Sprinkle the streusel over the batter in each muffin tin (about 1 to 1 1/2 
teaspoons per each), then bake in an oven preheated to 350 degrees for 18 to 22 
minutes, or until the center of the muffins bounce back to the touch. Remove 
from the oven and allow to cool.

Here's a recipe for salsa from a friend of mine. I haven't made it yet, but
it seems to be something that has no obstacles for blind folks. She also
cautioned that you should be careful how many peppers you include, as her
first attempt she accidentally put in twice the specified amount.
Salsa

1 can crushed tomatoes, thinned down with water (we use a 28 oz large can)
1 Tbs chile piquin peppers * (careful)
1/4 tsp garlic salt *
2 Tbs chopped onion *
1/4 tsp oregano *
1/4 bundle cilantro, chopped *

Mix together.  *Measurements to suit taste.  Keep refrigerated.

The piquin peppers can be found at Whole Foods but sometimes you can find
them 
in packages at other grocery stores but in the dried whole form.  The ones
at 
Whole Foods were crushed flakes.

Has anyone ever used an iGrill or iGrill mini?  I saw one for $40 and got
one because I heard it could work with my iPhone.

What I'd like to know is this.  I know it's for grills, but can I also use
it for things like baking chicken or pork chops or something like that?

If you bake them, I wouldn't think you'd have to flip them.  As for how hot 
and how long, I'd go with the info on a doneness chart, which I don't have

Has anyone used on of these grills? if so what are your thoughts?  I’m 
interested in grilling, but want something that will be a bite more easy to use 
than the charcoal that you would use outdoors.  I have a forman, but I just 
don’t think it gives the outdoor flavor that grilling outside on a bass grill, 
or another type of grill does?  is it in the seasoning?

Do n not have to flip if cook in the oven. Hint: season them well for best
flavor and spray or grease pan or they will stick. It depends how you like
them: 15 minutes to 20. I like mine pretty cooked so I do about 18 but my
boyfriend likes them almost burnt and that's 20 minutes.

No, the flavor works on one of  those little portable Webber or Webber style 
portable gas grills but I moved to a traegor smoker grill.
It is easy to use and messy to clean up but the taste is worth all the mess.

'Yes you can use  the i-Grill in the oven.

It has meat temps and things like that in the app.

I had the first generation i-Grill but found it not too helpful because I had a 
pretty good way of determining doneness already.
It is a neat little gadget though.

I prefer a smoker. It gives excellent flavor and control. Dale has featured
this on many of his shows and the food is absolutely delicious. I have also
used a gas grill with woodchips and this gives an excellent flavor as well
and offers great control for a blind person. It is not for a beginning cook,
but for anyone with some experience, a good gas grill is sort of like
cooking on a gas range outdoors and gives excellent flavor. Hint: Make sure
to get a self-lighting pilot. You can hear it ignite and the grill come on.

350 F  and the average is 35 minutes. A inside temperature is  165 to 175

I have a little smoker made by a company called Bradley it has an electric feed 
system to feed the wood onto a hot burner that is electrically heated. The wood 
pieces are small little parks about the size of an Oreo cookie. They are 
specialized and you have to buy them for the smoker. The smoker looks like a 
small student refrigerator with four shelves in at approximately 12 x 13 or 
even bigger than that. The shelf excuse me, the smoker has a dial four 
temperature and I'm on off switch for the smoke generator as well as a 
pushbutton to manually advance the wood box in the bottom of the smoker you can 
put a bowl filled with water to moisten the food and catch the burn marks. The 
pucks really don't burn they just smolder. On top of the machine the top of the 
smoker has a vent unit with a very small hole in the center of it that you can 
stick the probe of one of dales cooking thermometers into to read the internal 
temperature of the smoker. The dial can be marked to show the approximate 
temperature of the smoker will reach. It is a completely insulated box and does 
not get warm on the outside. It can be used as a cold smoker a smoking oven or 
an infrared or an infrared heater the oven.

 No, the flavor works on one of  those little portable Webber or Webber style 
 portable gas grills but I moved to a traegor smoker grill.
 It is easy to use and messy to clean up but the taste is worth all the mess.

[CnD] Gingerbread

Ingredients:
1/2 cup boiling water
1/2 cup shortening
1/2 cup brown sugar
1/2 cup light molasses
1 egg, well-beaten
1 1/2 cups sifted flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp ginger
3/4 tsp cinnamon
Method:
Preheat oven to 350 degrees.  Pour boiling water over shortening; add the
brown sugar, molasses and beaten egg.  beat well.  Sift dry engredients and
add, beat until smooth.  Bake in wax-paper lined 8-inchh square pan for 35
minutes.  Cool in pan and cut into squares.  Serve with whipped cream.

[CnD] Recipes wanted for Rangemate Multi Cooker

seem to have many recipes in it.  And I'll have to scan it. Does anybody happen 
to have one, and if so, where have you found other recipes for it. I got it 
because it looked pretty Summer friendly and blind friendly at the same time.

Have been making lots of smoothies lately but doing very little cooking. Will

[CnD] toaster ovens

My toaster oven is on its last legs, or toasters, so, I have to get a new
one.  I like the toaster oven because I use a wheelchair and ovens on stoves
are hard to get to.  It's nice to have an oven/toaster/broiler on my counter
top.  Anyone have a blind friendly one you like?  The on I had has all knobs
and no lights or screens.  They don't have it at Best Buys.

Hello everyone here is my recipe for salsa one can 28 ounce whole stewed 
tomatoes

One or two whole fresh jalapenos chopped finely with seeds 1 to 3 cloves garlic 
minced, one bunch green onions chopped, 1/4 cup cilantro chopped, pinch of 
cumin, salt and pepper to taste

Directions; I have done this, but you can use food processor processor to do 
this but you want to leave a little bit of Chuck's I use my hands when I 
smashed the stewed tomatoes you do not have to add any water after smashing 
stewed tomatoes combined the rest of the ingredients and enjoy woodchips

[CnD] Trimming fat from raw meat?

Hi all,
I was wondering how you go about trimming fat. When meat is cooked, it's easy 
enough to feel what's meat and what's not. In its raw form, though, everything 
feels the same, to me at least. So, if you have some chicken breasts, for 
instance, how would you get the excess fat off them? I know that having fat in 
meat can help its flavor a lot, but sometimes there are just parts that need to 
be removed before you start cooking. Granted, you could trim it once cooked, 
but what if you plan to cut it up, say for a casserole or stew? Anyway, it's 
just something I was curious about. Thanks.
