Re: [CnD] Is macaroni being made smaller?

There are different pasta shapes and sizes from A to Z. Do a Google
search for Pasta Fits, or Pasta Shapes Dictionary. It has suggestions
for use of each type.

I bought a box of elbow macaroni to make mac and cheese from scratch,
and was really surprised at how small the pasta was, as I remember it
being bigger. Has anyone noticed this, or, is there a bigger version
of elbow macaroni that has a specific name that I should look for? I
know, could use shells, but is there a bigger version of elbow macaroni

 out there?

 Thanks.

I suspect folks are for some unknown reason not buying as much of the
larger macaroni, so stores aren't carrying it as much. I remember macaroni
in about five different sizes, ranging from very small to about the length
and depth of the larger medium sized pasta shells.

[CnD] Looking for scalloped potatoes recipe

2015-10-18 Thread Andrea Stone via Cookinginthedark
Hi everyone,
I was just wondering if anyone has a recipe for scalloped potatoes in a creamy
sauce, but one that isn't a creamy cheese sauce?
We usually just buy boxes of them from the store, like in the Betty Crocker
brand and such. And the ones we buy always say they're in a creamy sauce, but
it never says it's a cheese sauce. I get sick if I eat cheese. Every home made
recipe I looked up all uses cheese. I'd like to find a cheeseless one to try,
if possible. Thank you for your help.

[CnD] Pasta Shapes

2015-10-18 Thread Sugar via Cookinginthedark
Here are just a few shapes
Pasta Shapes

When making delicious pasta dishes, be sure to choose a pasta shape and
sauce that complement each other. Thin, delicate pastas like angel hair or
thin spaghetti, should be served with light, thin sauces. Thicker pasta
shapes, like fettuccine, work well with heavier sauces. Pasta shapes with
holes or ridges like mostaccioli or radiatore, are perfect for chunkier
sauces.

Acini di Pepe ("Peppercorn") - Acini di Pepe is perfect to use in soup
recipes. These shapes are ideal to include in broths.

Alphabet Pasta:
This favorite kids' shape is usually used in soups for a fun meal anytime.

Anellini - Tiny rings of pasta. Anellini is a smaller version of Anelli
pasta. It is used in various soups and is also a compliment to a number of
salads.

Angel Hair, Capellini ("Fine Hairs") - These thin, delicate pasta strands
are best if used with thinner, delicate sauces. Other uses: break in half
and put in soup; use in salads or stir-fry meals.

Bow Ties, Farfalle ("Butterflies") - Bow Ties brighten any meal with their
interesting shape. Thick enough for a variety of sauces, or a perfect
addition to a number of salad or soup recipes.

Buctani - Thick Spaghetti shaped pasta that is hollow in the center, similar
to a thin straw. Bucatini is the perfect choice for nearly any sauce, or it
can be used to make casseroles or stir-fry dishes. Go beyond tomato sauce
and see what your favorite becomes.

Campanelle ("Bells") - Campanelle pasta resembles a small cone with a
ruffled edge. Pair Campanelle pasta with meat, cream, vegetable or oil based
sauces. Also, these shapes are great when used in pasta salads.

Cappelletti - Cappelletti pasta is folded and then twisted to form the shape
of a small hat. On occasion, this pasta is sometimes referred to as an
alpine hat.

Re: [CnD] Is macaroni being made smaller?

2015-10-18 Thread Nicole Massey via Cookinginthedark
I suspect folks are for some unknown reason not buying as much of the larger
macaroni, so stores aren't carrying it as much. I remember macaroni in about
five different sizes, ranging from very small to about the length and depth of
the larger medium sized pasta shells.

Did You Know...
Not all cornmeal is yellow! It can also be white or blue, depending on the
type of corn it came from.
Purchasing
To ensure recipe success if using a vegetable oil spread, use a spread with
at least 65% vegetable oil.
Substitution
Rise to the occasion! If using self-rising flour, there is no need to add
baking powder and salt.
Variation
If you prefer corn muffins, grease just the bottoms of 12 regular-size
muffin cups, or place paper baking cups in muffin cups. Fill about 3/4 full
with
batter.

I've also noticed this. Also, I cannot find a variety of Kraft macaroni an
cheese that uses big elbow macaroni. It's very tiny.

Subject: [CnD] Is macaroni being made smaller?

I bought a box of elbow macaroni to make mac and cheese from scratch, and
was really surprised at how small the pasta was, as I remember it being
bigger. Has anyone noticed this, or, is there a bigger version of elbow
macaroni that has a specific name that I should look for? I know, could
use shells, but is there a bigger version of elbow macaroni out there?

Thanks.
