You could just make the recipe, omitting the cheese. Try ground mustard or dill as flavoring. I also put sautéed onions in mine. Scalloped potatoes don't have cheese. Potatoes au gratin do. This recipe is great for sweet potatoes. It would work for regular. You can substitute other seasonings for the smoked Chile. I prefer the kind without cheese as well. The recipe sent to the group is an excellent one and you can actually substitute fresh broccoli to make another yummy dish.
