OREO TRUFFLES

1 pkg Oreos (1 lb 2oz)

1 8 oz block Cream Cheese

Meltable white chocolate wafers (from a Michael's or A.C. Moore craft-type 
store)

 

Blend Oreos to dust in blender, 7-8 at a time works best.

Cut cream cheese into 8 blocks.

 

Mix Oreo dust and cream cheese (KitchenAid mixer or similar works best) until a 
firm pasty dough-like consistency. 

 

Roll into dime-sized balls (hands will get messy!) and place on wax paper on 
cookie trays. The mixture should make around 120-140 balls, depending on size.

 

Chill balls in fridge for 2-3 hours.

 

I melt the white chocolate wafers in microwave per directions on bag in a small 
coffee cup. I stab a ball with a toothpick and dip into melted white chocolate 
to coat and place back on wax paper. Once finished coating chill in fridge 
again and keep chilled until serving. I remove all the toothpicks before 
serving.

 

NOTE - There are probably more efficient ways to coat the balls with the white 
chocolate, that's just my method above. I have to add wafers and melt 
periodically throughout the coating process. If the balls start to come off the 
toothpicks while dipping, chill them again. I usually have 3 cookie trays going 
so 2 can stay chilled while I'm dipping the 1. I use red and green vanilla 
flavored chocolate for the holidays.

cream doesn’t have to melt all the way prior to the party … it serves as the

CONFETTI DIP FOR RAW VEGETABLES   

8 oz. cream cheese, room temperature

1 stalk green onion (include green top chopped fine)

1 med. tomato, chopped

1 tsp. salt

1 tsp. dry mustard

1 tsp. pepper

 

Mix together above ingredients. Stir in 8 ounce container sour cream.

NO-BAKE GINGERBREAD BALLS

5 ounces gingersnap cookies (about 20 cookies)

3 tablespoons corn syrup

2 tablespoons peanut butter

1/3 cup powdered sugar, sifted 

 

Place cookies in a food processor and process until finely ground. 

Add corn syrup and peanut butter and process until mixture comes together. 
Scrape down the sides of the processor's bowl if necessary. If mixture is too 
dry to come together, add another tablespoon of corn syrup. Shape mixture into 
1-inch balls, then roll in powdered sugar

Sugar’s Diabetic Friendly fruit salad

 

What you need:

1/2  banana

1 16 ounce fruit cocktail-unsweetened in water not syrup-Drained

1 can either crush or pineapple diced, drained. (Save a little of juice)

3 to 4 small sugar-free vanilla instant puddings

8 ounce tub of sugar-free French vanilla cool whip

1 cup fresh sliced strawberries

½ cup unsweetened coconut flakes

½ cup pecans or favorite nuts like almonds, cashews, peanuts

1 small bag of small colored marshmallows)option) 

 

Instructions:

Mix all together and fold in ingredients and place in the fridge over night or 
2 hours before serving
