Here are two more: Traditional Teriyaki Sauce Makes about 1 1/2 cups, easily doubled 7 tablespoons sake 7 tablespoons mirin cooking wine 7 tablespoons dark soy sauce 1 tablespoon sugar Combine all ingredients in a small saucepan, set over medium heat, bring to a boil and simmer until the sugar is dissolved. Remove from the heat and either use immediately or cool and store in the refrigerator until ready to use. The sauce will keep almost indefinitely. Beer-based Teriyaki Marinade Makes about 1 cup 1 cup beer (a pilsner or lager) 2 tablespoons honey 3 tablespoons soy sauce 1 tablespoon freshly grated ginger (juice and pulp) Put all the ingredients into a mason jar, secure the lid and shake gently until well mixed. Use immediately as a marinade.
