What about some of the Mrs. Dash seasonings? They have quite a variety and you
can probably get no salt or low sodium in the Mrs Dash brand. I have what I
call a beef bean chilli recipe and I used to use a packet of tacco seasoning in
it. I need to watch my sodium, so even though I had been getting reduced sodium
in other brands, I found a Mrs Dash tacco seasoning that has no salt and it is
really very good. The lack of sodium does not take away from my recipe at all.

Good luck.

The big problem with broth in this recipe is the fluid level. To get it to work
you'd want to simmer it down to far less liquid, otherwise the result would be
a lot more soupy. You could work with it by replacing the bullion with broth
and the canned soup with soup mix powder, but it might require some fiddling.
Another option would be to get bullion from a natural grocer like Whole Foods.
Without it the flavor is probably going to be a bit bland. The only other
option I can think of is to run some canned or cooked chicken through a food
processor to turn it into a paste. You might want to experiment with adding
some poultry seasoning to it as well.

My husband and I were on a diet once. We had this recipe that called for
bouillon but it seemed so salty to us. So what I did was use chicken broth and
I would add to that whatever spices I wanted--can't remember which spices I
added. That gave it some flavor. I'd stir the spices and broth together and
add to the rest of the ingredients. That might be an idea.

SLOW COOKER CHICKEN ENCHILADA SOUP

This slow cooker chicken enchilada soup recipe only takes about 10 minutes
of prep time, and it is oh-so-delicious and comforting.

Prep Time: 10 mins

Cook Time: 4 hours

Total Time: 4 hours 10 mins

2 boneless skinless chicken breasts (about 1 pound)

2 cups good-quality chicken stock

1 1/4 cup (or 1 10-oz can) red enchilada sauce*, homemade or store-bought

2 (14-ounce) cans black beans, rinsed and drained

1 (14-ounce) can fire-roasted diced tomatoes, with juice

1 (15-ounce) can whole-kernel corn**, drained

1 (4-ounce) can diced green chiles

2 cloves garlic, minced

1 white onion, peeled and diced

1 teaspoon ground cumin

1 teaspoon salt, or more/less to taste

optional garnishes: chopped fresh cilantro, diced avocado, diced red onion,
shredded cheese, sour cream, tortilla strips/chips

Add all ingredients to a slow cooker, and stir to combine. Cook for 3-4
hours on high heat or 6-8 hours on low heat, until the chicken is cooked
through and shreds easily. Use two forks to shred the chicken.

Serve warm, with optional garnishes.

You can also refrigerate in a sealed container for up to 5 days. Or freeze
it for up to 3 months.

*If you are making this soup gluten-free, be sure to use gluten-free
enchilada sauce.

**If you don't like that much corn, just use half a can, drained

Its probably personal preference right to put certain ingrediances in
correct? Or if not will that ruin, the dish. I ask this for two reasons, at
times at the store where I shop, I'm unable to locate things like yello
onion, sweet pepper etc. My next question is What could I use in substitute
for something I can't find like cuman for example.
