Yes, the client would be what actually performs the folding itself. I
would also recommend downloading "fahcontrol" as well, as this allows
more advanced control of the client than the web interface does.
"fahviewer" is optional, it just provides a graphical visualization of
the protein you're currently folding.

I can't find the hashes to verify the integrity of the debs, of which
there are three. Which one would I need to begin folding if I were to
throw caution to the wind and install one or all of them? The "client,"
I assume (though often my assumptions have led me astray).

Yes definitely, Fedora 31 is supported, and there are .rpm packages 
available on the site. All the different versions can be found here: 
https://foldingathome.org/alternative-downloads/.


Feel free to join the team if you want as well, there aren't any joining 
requirements.

For anyone who is unaware, the Folding@Home project is a distributed
computing project aimed to help scientists develop new therapeutics
for a variety of diseases by the means of simulating protein dynamics.
This includes the process of protein folding and the movements of
proteins, and is reliant on simulations run on volunteers' personal
computers.

I'd like to encourage everyone who is willing and able to contribute
your spare CPU/GPU cycles for Folding@Home to do so (for example, if
you have a home server, or a computer that is running fairly often),
and if you already are doing so, I encourage you to join the Debian
team.
