We offer Evolutionary Ecology and Geology of mainland Ecuador and the Galapagos 
as a Study Abroad class every other January.  There are both undergraduate and 
graduate student versions.

I was a biology and environmental science major at University Wisconsin -
Green Bay and I spent a semester studying abroad at University of Auckland
- New Zealand and it was phenomenal. I was able to take two biology courses
and a GIS course. The country is also fantastic for ecologists and students
who love the outdoors. Hope this helps.

I second Chris!  I studied abroad in New Zealand last year and had an  
incredible experience.  I cannot recommend Frontiers Abroad enough!   
Their programs are lead by professors from the University of Auckland  
and University of Canterbury and involve a semester at one of those  
universities, as well as a six-week field camp before the semester  
begins.  During field camp, students design and implement independent  
projects which they then work on through the course of their time in  
New Zealand.  I participated on the Frontiers Abroad Earth System  
Science program and my project involved using GPR to examine a  
potential fault next to a hospital in Whakatane.

I am a senior undergrad student Drexel University and studied abroad on
Bioko Island of Equatorial Guinea this past Fall. Here is a link to their
