WITCH'S BREW 
Ingredients:
3 pints purple grape juice
1 1/2 pints club soda
Grapes
Apples
 
Directions:
Mix the grape juice and soda in a pitcher. Halve the grapes 
And take out the seeds if there are any. 
Cut the apple into small chunks. 
Float the fruit in the brew just before serving; by magic, 
The grapes and apples will look just like eyes and teeth.

Glowing Jack-O-Lantern Cookies
 
2 cups all-purpose flour 
2 teaspoons baking powder 
1/4 teaspoon salt 
1/2 cup butter 
1 cup granulated sugar 
1 large egg 
1 teaspoon vanilla extract
1 tablespoon milk 
Orange and green food coloring 
1 (5.5-ounce) package lemon drop candy, crushed* 
Preheat oven to 350*F (175*C). Cover 3 baking sheets with foil; set aside. 

In a medium bowl, combine flour, baking powder and salt,
 Mixing well; set aside.  Cream butter and sugar together until light and 
fluffy. 
Add egg and vanilla and mix well.   Stir in flour mixture. 
Add milk if batter is too stiff. 
Tint all but 1/8 of dough orange and tint remaining dough green. 
Roll 1-inch balls from the orange dough and flatten with the 
Bottom of a sugar coated glass. Place on prepared baking sheets. 
Roll stems out of the green dough and attach to the top of the  pumpkin. 
Carefully cut out wide spaces for the eyes, nose and mouth with a sharp 
knife. 
Fill holes in with the crushed lemon candy. 
(Candy will melt when baked) Bake 8 to 10 minutes or until done.
 Do not allow to brown. Allow to cool for 10 minutes and carefully 
Peel off foil. Makes about 3 dozen. 
*Crush lemon drops in food processor with a little powdered sugar.

1 cup crunchy peanut butter 
1/3 cup water 
2 large eggs 
1 (18.25-ounce) package chocolate cake mix 
MM's plain candies
Red hot candies 
Preheat oven to 375*F (190*C). 
In a large bowl, beat together peanut butter, eggs, and water. 
Gradually add cake mix. Mix well. Form dough into 1 1/2-inch balls.
 Place on ungreased baking sheet. Flatten balls with bottom of glass dipped 
in sugar. 
Pinch out 2 ears at top of cookie. 
Add MM's for the eyes and red hots for the nose. 
Press fork into dough to form the whiskers. 
Bake for 8 to 10 minutes. Cool on wire racks.

Chicken Lady Fingers with Romanian Romesco Dipping Sauce
 
3/4  cup all-purpose flour 
1  teaspoon salt 
1/2  teaspoon ground black pepper 
1 -1/2  pounds boneless, skinless chicken breast halves, 
Cut into 1/2-inch by 3-inch strips 
1  tablespoon olive oil 
1  tablespoon unsalted butter 
Smoked Spanish or regular paprika 
Romesco Dipping Sauce 
2  large red sweet peppers, halved lengthwise, 
Seeds and membranes removed, flattened 
1  cup day old crusty bread, cubed 
3/4  cup chopped fresh tomato (1 large) 
1/3  cup sliced natural almonds, toasted 
3  tablespoons sherry vinegar 
3  cloves garlic, minced 
1/2  teaspoon smoked Spanish or regular paprika 
1/2  teaspoon salt 
1/4  teaspoon ground black pepper 
1/4  cup olive oil 
Prepare sauce; cover and chill. 
 
For Chicken Fingers, 
In large bowl combine flour, 1 teaspoon salt, and 1/2 teaspoon pepper.
 Coat chicken strips in flour. 
Heat 1 tablespoon oil and butter in large nonstick skillet over high heat. 
Add chicken strips, one-third at a time, browning well on all sides, 3 to 4 
minutes per batch. 
Dip the end of each chicken strip in ground paprika. 
Serve with Romesco Dipping Sauce. Makes 10 servings (about 40 pieces). 
 
Romesco Dipping Sauce: 
 
For sauce, preheat broiler  Place peppers on a broiler pan. 
Broil peppers, 4 to 5 inches from the heat, until skins are blacked, 
Turning once. Remove, stack pieces together, 
Cover with aluminum foil and let stand 15 minutes. Peel off skins; 
Discard skins. In blender combine peppers, bread, tomato, almonds, 
Vinegar, garlic, paprika, 1/2 teaspoon salt, and 1/4 teaspoon pepper. 
Cover and blend. 
Add 1/4 cup olive oil in steady stream through the top of 
Blender until mixture is almost smooth. 
Transfer to a serving bowl or storage container. 
Cover and chill until serving time. 
Tip: You can prepare the sauce ahead of time. 
Cover and chill up to 3 days.
With Romanian Romesco Dipping Sauce

6  ounces bittersweet chocolate, melted

3/4  cup creamy peanut butter

For cake: Preheat oven to 350 degrees F. Butter a 15x10x2-inch -inch

Line pan with parchment paper, leaving a short overhang on two sides for 
easy cake removal. 
Butter parchment. In bowl of stand mixer fitted with whip attachment, beat 
egg yolks

Cheesecake Pie
1 prepared 9-inch (6 ounces) graham cracker crumb crust
2/3 cup (5 fluid-ounce can) evaporated milk
1 package (8 ounces) cream cheese, softened
1 large egg
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon grated lemon peel
1 1/2 to 2 cups halved fresh strawberries
3 tablespoons strawberry jelly, warmed
 
Directions:
PREHEAT oven to 325° F.

PLACE evaporated milk, cream cheese, egg,  
sugar, flour and lemon peel in blender;  
cover. Blend until smooth. Pour into crust. 

BAKE for 35 to 40 minutes or until center is set.  
Cool completely in pan on wire rack. Arrange strawberries  
on top of pie; drizzle with jelly.  
Refrigerate for 2 hours before serving.

1 small onion, chopped
1 cup chopped celery
1 Tbsp oil
2-3 cups diced turkey
1 cup cooked rice
leftover gravy OR combination of leftover gravy and chicken broth
 
1.  Saute onion and celery in oil in saucepan until translucent.
2.  Combine all ingredients in slow cooker, adding gravy and/or broth until 
of the consistency you want.
3.  Cover.  Cook on Low for at least 2 to 3 hours, or until heated through.

Lemon Cheese 
Bundt Cake
 
2 sticks margarine, softened
1 stick butter, softened
1 8 oz. Package cream cheese, softened
6 eggs
3 cups cake flour, sifted
3 cups granulated sugar
1/8 tsp. Vanilla extract
1/8 tsp. Lemon extract
 
Cream together margarine, butter 
and cream cheese in a *large* bowl.
Add 2 eggs, 1 cup flour and 1 cup sugar; 
mix well.  Repeat until all eggs, flour and 
sugar have been added.  Add extracts
 and mix well.  Place batter in a greased, 
floured bundt pan.  Bake at 300F - 325F 
for 1 hour and 15 minutes, or until a 
toothpick inserted in the center comes out clean.

Black Eyed Bean Salad
Servings: 6

2 cups fresh green beans 
1 can black eyed peas 
1 can black beans 
1 large clove garlic 
1 shallot or small red onion 
3 Tbsp chopped fresh parsley 
1 tsp dried thyme or 1 Tbsp chopped fresh thyme 
1 Tbsp Dijon mustard 
2 Tbsp extra virgin olive oil 
1 Tbsp white vinegar 
Salt and pepper to taste 

Drain peas and beans in colander, and rinse if necessary. Chop green beans 
in thirds
after taking off ends. Steam green beans until just done, al dente, and a 
bright green
color. Immediately immerse in cold, even icy, water to stop cooking. Mix 
olive oil,
vinegar, Dijon mustard, chopped garlic, chopped shallot, salt, pepper, 
thyme and parsley
in a large bowl. Add drained peas and beans to dressing and mix well, but 
gently. Last
add green beans and toss lightly to coat. Top with fresh parsley and thyme 
sprigs and
serve at room temperature.

Cherry Scones

1/3 cup dried cherries
1/2 cup boiling water
1 1/2 cup flour
1 1/2 tablespoon granulated sugar
1/2 tablespoon baking powder
1/3 cup Half and Half -- plus 1 tablespoon
1/4 teaspoon cream of tartar
1/4 cup butter, room temperature
1 egg, separated
1/4 cup sour cream
1/4 teaspoon salt
3/4 teaspoon almond extract 

Soak cherries in hot water for 10 minutes and then drain and set aside. 
Combine the dry ingredients in a large bowl. Using a pastry blender, cut in the 
butter until mixture it resembles coarse crumbs. Set aside. In a small 
bowl, mix together the egg yolk, sour cream, cream and extract. Add the sour 
cream mixture to the flour mixture and stir until a soft dough forms. Mix in 
the cherries and then knead the dough lightly on a floured surface just until 
dough can be handled. Shape dough into a ball and pat into a 6-inch circle 
on a greased baking sheet. Cut into six wedges and brush with beaten egg 
white and then sprinkle with sugar. Bake at 400 degrees F. for 15 to 20 
minutes. 

Cherry Tea

6 cups water
1/4 cup maraschino cherry juice
4 tea bags---black or green tea
1 teaspoon lemon juice 

Boil the water, remove from heat and add the tea bags. Brew for 5 minutes. 
Pour into a teapot with the juices. Serve in cups warm, or over ice. This is 
easily doubled. 

Cherry Cheese Spread

1 cup dried cherries
1 cup water
2- 8-ounce packages cream cheese, softened
1 tablespoon fresh lemon juice
1/4 teaspoon dried thyme
1/4 teaspoon lemon zest 

In a small heavy pan simmer the dried cherries in water until water is 
reduced to about a tablespoon. Remove pan from the heat and cool. In a medium 
sized bowl, beat the remaining ingredients together with the cherries and 
water once they have cooled. Serve with scones or crackers.

6. Alternate layers of filling and lady fingers in lined pan. Chill 
overnight.
7. Garnish with whipped cream and shaved chocolate.

, it took us quite a few iterations before we discovered the perfect potion 
for this usually overly-sweet concoction. A hint of ginger and the 
sweetness of butterscotch combine to create a delightful and refreshing 
non-alcoholic drink, capable of making even Severus Snape smile.

Butterbeer Recipe
12 oz. (one bottle) ginger beer
36 oz. (three bottles) cream soda
3 T butterscotch ice cream topping 
Thoroughly chill unopened ginger beer and cream soda in refrigerator until 
icy-cold.  Refrigerate empty, glass pitcher as well.  Once beverages are 
chilled, in a small mixing bowl or tall glass, stir 1-2 oz. Of cream soda into 
butterscotch topping till thoroughly combined.  Pour all remaining soda into 
chilled pitcher. Quickly add butterscotch mixture to pitcher.  Stir till 
just combined;  do not over-stir.  Pour over ice and serve immediately.  
Serves 6. 
For a frothy sparkle, dip the rim of each glass in corn syrup, pulling 
drips of syrup downward with a toothpick.  Then dip each glass rim in a mixture 
of colored sugar.  Before dipping, spread the corn syrup  sugar mixture 
each onto a separate, flat-bottomed plate. 
For an old-world, textured effect, mix fine, yellow sugar with coarser, 
gold sugar.  Colored sugars are available at many grocery stores and craft 
chains.  The sugars shown here are both from _Michael's_

Vegetable oil 
12 Pork hangers; (Irish breakfast sausages) 
6 slice Irish bacon 
1 pkt (8-oz) White Breakfast Pudding; sliced into 1/4 inch-thick rounds 
3 med Tomatoes 
0.25 tsp Salt 
0.25 tsp Ground black pepper 
6 large Eggs 
Fresh thyme sprigs; (opt.) 
Heat oven to 200°. Prepare Potato Pancakes and place on large ovenproof 
platter; keep warm in oven while preparing re-maining ingredients 
In large skillet, heat just enough oil to thinly coat bottom of skillet 
over low heat. Add hangers, arranged in a single layer, and cook, turning 
frequently, until browned on all sides. Remove hangers to oven platter with 
Potato Pancakes. Add bacon to skillet and fry, turning frequently, until done. 
(Irish bacon does not become crispy when cooked; it has the texture and color 
of smoked ham.) Remove bacon to platter in oven. Add breakfast pudding 
rounds to skillet and cook, turning, until firm and browned on cut sides; 
remove 
to oven platter.·  
Cut tomatoes crosswise in half; sprinkle with 1/8 t salt and 1/8 t pepper. 
Fry tomatoes, cut sides down, in skillet until lightly browned (do not 
overcook; tomatoes should retain their shape). Remove to oven platter.·  
Just before serving, fry eggs, in batches, sunny-side up or as desired;

In 4-quart saucepan, cover 4 medium baking potatoes with water and heat to

C (1/2 stick) butter. Stir in 1/2 C unsifted all-purpose flour, 1 large 
egg, 1 T chopped fresh parsley leaves, 1 T chopped fresh chives, 1 t salt, and 
1/2 t ground black pepper; mix until well blended. In large skillet, heat 2 
tablespoons vegetable oil over medium heat. Shape potato mixture into twelve 
2 1/2-inch patties and fry, in batches, until golden brown on both sides, 
adding more oil as necessary. ·

CREME' DU MOCHA
{ from France }

8 oz. semi-sweet chocolate
6 eggs, separated
½ cup of sugar
1 Tbsp. strong coffee
1 Tbsp. vanilla extract
2 Tbsp. rum
1 cup of chilled whipping cream

Melt the chocolate over low heat in a medium sized saucepan. Beat the
egg yokes and sugar in a small bowl until thick. Stir the egg yolk,
vanilla, rum and coffee into chocolate. Whip until stiff and glossy:
fold into the chocolate. Chill for 5 - 6 hours.

Beat the cream in a chilled medium sized mixing bowl until stiff. Fold
into the chocolate. Spoon into dessert dishes. Chill until served.
*Yield 8 servings

Jack Daniel's Bread Pudding



1 cup raisins 
1 tablespoon fresh orange or lemon zest 
1/3 cup Jack Daniel’s® Tennessee Whiskey 
7 cups cubed white bread, lightly toasted 
4 eggs 
1 cup sugar 
3 cups milk 
1 teaspoon vanilla 
¼ cup (½ stick) butter, cut into small pieces 
Nutmeg, to taste 



Combine the raisins, zest, and Jack Daniel's® in a small bowl. Let soak 
about 20 minutes. Butter a 9 x 13-inch baking dish. Place bread cubes in the 
prepared dish. Whisk together the eggs and sugar in a large mixing bowl. Stir 
in the milk and vanilla. Sprinkle the raisin mixture evenly over the bread 
cubes. Pour the egg mixture over the bread and let stand about 15 minutes. 
Heat the oven to 375°F. Dot the top of the pudding with butter and sprinkle 
with nutmeg. Bake until golden brown and set in the center, about 35 to 40 
minutes. Serve warm. Drizzle each serving with heavy cream, if desired. Makes 
12 servings. 
 
Jack's Birthday Cake


2 ¼ cups all-purpose flour 
2 ¼ teaspoons baking powder 
½ teaspoon salt 
1 cup (2 sticks) butter 
2 cups firmly packed brown sugar 
4 eggs 
½ cup Jack Daniel's® Tennessee Whiskey 
1 cup chopped pecans 
1 package (6 ounces) semisweet chocolate chips 
Hot Buttered Whiskey Glaze (recipe follows)
Heat oven to 325°F. Grease a 9 x 13-inch baking pan. Combine the flour, 
baking powder, and salt in a medium mixing bowl. Set aside. Melt butter in a 
large saucepan over low heat. Remove from heat. Stir in the brown sugar, eggs, 
flour mixture, and Jack Daniel's®, stirring well after each addition. Pour 
batter into the greased pan. Sprinkle evenly with pecans and chocolate 
chips. Bake 45 to 50 minutes or until center of the cake is firm and edges 
begin 
to pull away from the sides of the pan. Cool on a wire rack and drizzle with 
glaze. Makes 16 servings.
Note: Cake may be baked in a greased 10-inch tube pan. Increase the baking 
time to 1 hour. Cool in the pan 10 minutes. Turn out onto a wire rack and 
cool completely. Drizzle with the glaze. 


Hot Buttered Whiskey Glaze

¼ cup melted butter 
2 cups powdered sugar 
3 tablespoons Jack Daniel's® Tennessee Whiskey 
1/3 cup Jack Daniel’s® Tennessee Whiskey 
1 teaspoon vanilla
Combine all ingredients in a small bowl. Blend well with a wooden spoon. 
Drizzle over the cake. 


Miss Mary's Fudge Pie

¼ cup (½ stick) butter 
1 ½ cups sugar 
3 tablespoons cocoa powder 
2 eggs, beaten 
½ cup evaporated milk 
1 tablespoon Jack Daniel's® Tennessee Whiskey 
1 (9-inch) graham cracker piecrust 
Sweetened whipped cream
Heat oven to 350°F. Melt butter in a saucepan over medium heat. Stir in 
sugar and cocoa powder. Stir in eggs, evaporated milk, and Jack Daniel's®. Pour 
into the prepared piecrust and bake for 30 to 35 minutes or until set. Cool 
completely. Serve slices with a dollop of whipped cream sweetened with 
sugar and a little Jack Daniel's®.
Sprinkle cream with a dusting of cocoa powder. Makes 8 servings.

Banana Nut Coffee Cake


1 package yellow cake mix  
1 small package vanilla instant pudding  
1/2 cup vegetable oil  
4 eggs  
1 teaspoon vanilla extract  
3 medium bananas, sliced  
1 cup pecans 
Preheat oven to 350F. Combine cake mix pudding mix, oil eggs, vanilla and 
bananas in food processor. Beat at high speed for 1 minute. (If using hand 
mixer beat at high speed for 8 minutes) Add pecans and beat 5 seconds. Pour 
batter into greased 3 quart bundt pan. Bake 55 minutes. Cool in pan 10 
minutes. Invert onto serving plate.

Tips for Lightening Up Favorite Recipes  


You can moderate favorite recipes with a few easy substitutions and tips 
that'll help you cook and eat more moderately without sacrificing flavor:

Canned soups are a great beginning for sauces and casseroles. If we choose 
lighter or reduced-fat or reduced-sodium versions, we can sure save calories 
and cut down on fat and sodium.

Select oils such as canola or safflower for frying; they're lower in 
saturated fat than other types.

When frying, make sure you heat your oil until hot but not smoking. Simply 
using the right-temperature oil will help reduce the fat that's absorbed 
into food when it cooks. Frying oil should stay outside your food!

Drain all fried foods on clean paper towels to remove as much excess oil as 
possible.

When a recipe calls for peanuts, pecans or other nuts, don't be afraid to 
cut down the amount. Usually we can cut the amount in half and still get 
great flavor and texture.

In may cases, we can replace whole eggs with egg whites. (Two egg whites 
equal one whole egg.) And in most recipes, you can go ahead and replace eggs 
altogether with egg substitutes. However, I don't recommend using egg 
substitute when coating foods for breading. Breading doesn't stick to it very 
well.

Choose lean cuts of meat and trim away any visible fat before preparing. 
Serve moderate-sized portions, like 3 to 4 ounces of cooked meat (about 4 to 6 
ounces raw) per adult. (That's about the size of a deck of playing cards.) 
And with ground meats, select leaner blends, preferably ones that have a 
90/10 meat-to-fat ratio. (Traditional ground beef and pork usually have a 70/30 
ratio.)

Choose cooking methods (like roasting, broiling, grilling and baking on a 
rack) that allow fat to drip away during cooking.

In most recipes, you can replace ground beef or pork with turkey. Keep in 
mind, though, that ground turkey needs more seasoning than beef and pork.

If browning ground beef, pork or turkey before adding it to a recipe, after 
browning, place it in a strainer, rinse it with warm water, then drain and 
continue as directed. This should remove most of the excess fat.

In most recipes you can replace whole chicken or parts with boneless and 
skinless chicken breasts. Remember that boneless breasts are generally 
thinner, so they'll cook more quickly than bone-in parts; adjust your cooking 
time 
accordingly.

Remove the layer of fat that rises to the top of soups, stews and pan 
juices of roasts. Chilling makes this a breeze, so it's even easier to do with 
dishes that are made ahead and chilled before being reheated. Or, a timesaving 
tip for removing fat from soups and stews is simply to add a few ice cubes 
to a warm cooked dish. As soon as the fat sticks to the cubes, remove them, 
and the fat will come out right along with them!

Look in your supermarket dairy case for some reduced-fat, low-fat, or 
fat-free alternatives. For instance, there's low-fat milk for our soups and 
sauces, instead of heavy cream. (Evaporated skim milk will work, too.) The same 
goes for our cheese choices. Experiment with those, or maybe just use a 
little less of the regular full-fat versions.

When it comes to mayonnaise, there are lighter varieties available too. And 
when using it in a salad, mix it in just before serving... you can usually 
get by with using less that way. Or you can use a combination of half 
mayonnaise and half low-fat yogurt. It does the trick, too!

Deep Fried Radishes


1 1/2 cups All-purpose flour
1/2 cup Cornstarch
1 teaspoon Baking powder
Cold water as needed

Dipping Sauce

2 tablespoons Sugar
2 tablespoons Ketchup
2 tablespoons Cider vinegar
2 tablespoons Pineapple
Soy sauce to taste
2 tablespoons Cornstarch (mixed with 2 tablespoons
water)

Vegetable oil for frying

Sliced radishes


Mix together with enough cold water to form the consistency of heavy cream.
Make sure there are no lumps. Refrigerate until thoroughly chilled.

Heat together sugar, ketchup, vinegar and juice in a small pan. Bring to a
boil. Add enough soy sauce to color the mixture lightly. Then add the
cornstarch/water mix. Return to boil and cook until thickened.

Heat oil to 375º°. Dip radishes into the chilled batter, 2 to 4 minutes,
and
allow excess to drip off before placing it gently- use slotted spoon - in
the hot oil. Remove with slotted spoon and drain on paper towels. Serve
immediately with dipping sauce

Hot Italian Potato Salad 
(Made with only fresh Hot Italians) hehehhe

A zesty warm potato salad made from pepperoni, onion, and a little dry 
vermouth.
Great as a side dish with dinner or potluck.

Ingredients:
* 2 t. olive oil 
* 8 med. potatoes 
* 1 pkg. Good Seasons Italian dressing 
* 1 t. oregano 
* 1 t. flour 
* 2 t. instant minced onion 
* 1/3 cup dry vermouth 
* 2 t. chopped parsley 
* 1/4 cup shredded pepperoni

Method
Pare potatoes and cube. Combine Good Seasons, oregano, flour, onion. 
Sprinkle
over potatoes in casserole and toss. Pour olive oil and vermouth over 
potatoes.
Add pepperoni and toss. Sprinkle with parsley. Bake uncovered at 425 for 1

1/4 cup butter
8 oz ham, chopped

Cook the penne in a large pot of salted, boiling water until al dente ..
Trim the tough parts off the asparagus and cook in a pot of lightly salted,
Boiling water until the tips are almost tender. Drain well. Chop the stalks
Into short lengths and leave the tips whole .. Heat the butter and ham in a
Small, heavy-bottomed saucepan. Cook for 2-3 minutes .. Stir in the cream
And flour, then add the asparagus. Stir gently over medium heat for 3--4
Minutes, or until the cream thickens. Season with salt and pepper .. Drain
The pasta and place in a heated serving dish. Add the sauce and toss well.
Sprinkle with the Parmesan and serve hot.

1 3/4 cups raisin bran cereal
1 1/4 cups all-purpose flour
3/4 cup sugar
1 1/4 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
3/4 cup buttermilk
1/4 cup canola oil
3/4 cup tart apples -- finely chopped,
-- peeled
3/4 cup carrots -- grated
1/4 cup walnuts -- chopped

In a bowl, combine the first six ingredients. In a small bowl, beat the 
egg,buttermilk and oil. Stir into dry ingredients just until moistened. Fold in 
apple, carrots and walnuts. Fill paper-lined muffin cups or cups
coated with nonstick cooking spray three-fourths full. Bake at 400 F. for
20-23 minutes or until a toothpick comes out clean. Cool for 5 minutes 
before removing from pan to a wire rack. Serve warm.

Halloween Brunch Casserole


1 pound bacon
1 tblsp butter or margarine
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 tsp salt
1/4 tsp garlic salt
1/2 tsp black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Preheat oven to 400 degrees. Grease a 13x9 inch casserole dish. Place bacon 
in a large deep skillet. Cook over medium high heat until evenly brown. 
Drain, crumble and set aside. In a separate skillet, melt butter and fry onions 
and mushrooms until tender. Place potatoes in bottom of prepared dish. 
Sprinkle with salt, garlic salt and pepper. Top with bacon, then onions and 
mushrooms. In a large bowl, beat eggs with milk and parsley. Pour over 
casserole. Top with grated cheese. Cover and refrigerate overnight. Bake in 
preheated 
oven for 1 hour or until set. If preparing and baking the same day, cook 
for 45 minutes.

Pioneers were very creative when it came to inventing recipes to use up all

leftovers. Here is an interesting recipe, using traditional recipes, but
winding
up with a nontraditional result.

Sausage Cake
Into a mixing bowl break up 1/2 pound sausage and beat in one cup white
sugar,
adding 1/4 teaspoon salt and 1/2 cup buttermilk. Next sprinkle over the
mixture
1/2 teaspoon each of cinnamon, nutmeg, and allspice; mix thoroughly. Sift 1
1/4
cup flour with ½ teaspoon baking powder and 1/2 teaspoon soda; blend in
slowly.
Have 1/2 cup raisins soaking in warm water. Drain them and lightly flour;
add to
mixture along with 1/2 cup chopped nuts. Pour into a buttered and floured 9
iron skillet and bake in a moderate oven for 45 minutes to an hour. Serve
warm.

Preheat oven to 350 degrees.  In saucepan, combine green beans, tomato 
sauce, onion, garlic and basil; heat.  Pour into casserole dish that has been 
sprayed with nonstick cooking spray (olive oil spray gives a good falvor).  Tp 
with cheese and bake 15 minutes.

Summertime Pasta Salad 
I got this recipe out of the coupon section years ago and just finally 
tried it. It's very light and fresh. 
 

1/2 cup white vinegar
1/2 cup vegetable oil 
1 teaspoon granulated sugar 
1/2 teaspoon salt 
1/2 teaspoon pepper 
4 cups twirly pasta, cooked then chilled 
1 1/2 cups broccoli florets 
1 medium red pepper, cut in thin strips 
2 cups cooked ham, julienned 
1 cup carrot, sliced in thin strips 

Place first 5 ingredients in a jar; shake until ingredients are well 
blended. 
Combine dressing with remaining ingredients and toss. 
Can be served as a side dish or on lettuce leaves for a meal.

Garlic Salsa-Karri Ann Allrich

2 cups chopped roma tomatoes
1 small red onion, diced fine
6 garlic cloves, minced
1 red pepper, seeded, cored, chopped
2 jalapeno peppers, seeded
1 can (14 ounces) Mexican style tomatoes
2 tablespoons balsamic vinegar
¼ cup lime juice
2/3-cup fresh chopped cilantro
1-teaspoon cumin
1 teaspoon hot chili flakes or cayenne pepper

Combine all ingredients, cover and let stand for an hour so that the 
flavors mingle. Taste for seasoning adjustments. Serve at room temperature. 
Refrigerate if you do not plan to serve it right away. Homemade salsa usually 
keeps well refrigerated for up to 4 days.
 
 




Green Goddess Guacamole-Karri Ann Allrich

2 ripe avocados, peeled, pitted
2 red ripe tomatoes, chopped
3 garlic cloves, minced
Juice from half a lemon
½ teaspoon cumin
¼ cup fresh finely chopped cilantro
Red pepper flakes
Salt
Black pepper

Mash the avocados in a bowl then add the chopped tomatoes, garlic, lemon 
juice, cumin, and cilantro. Season with red pepper f lakes, sea salt, and 
pepper to taste. Serve with blue corn chips.








Baked Eggplant with Goat Cheese-Karri Ann Allrich

2 medium size eggplants
Extra virgin olive oil or olive oil spray
1 cup Italian style seasoned bread crumbs
6-8 roma tomatoes, sliced
4 garlic cloves, minced
2 tablespoons caper, rinsed
1-teaspoon marjoram
2 tablespoons chopped fresh Italian parsley
Salt
Pepper
5 ounces goat cheese
1-tablespoon extra-virgin olive oil

Preheat your oven to 400 degrees. Slice the eggplant ¼ inch thick. Brush 
lightly or spray with olive oil. Dip slices into a bowl of seasoned 
breadcrumbs, arranging them on a baking sheet in a single layer.  Bake them for 
10 
minutes, until golden and slightly crisp.

Reset the oven temperature for 375 degrees. Oil a large baking dish and 
arrange the eggplant slices, overlapping if you need to. Cover the roasted 
eggplant with the tomatoes slices and sprinkle with garlic, capers, marjoram, 
and parsley. Add a pinch of salt a nd pepper and top with the goat cheese. 
Drizzle 1 tablespoon of extra-virgin olive oil lightly over the tomatoes and 
goat cheese.

Bake in a 375-degree oven for 15-20 minutes, until heated through and the 
cheese is melted.

Creamy Crock-Pot Potatoes

Ingredients 
1 10(3/4) oz. - can cream of potato soup - undiluted 
2 8 oz.. - pkgs. cream cheese 
2 lbs. - small red potatoes 
1 env. - buttermilk ranch dalad dressing mix 
Directions 
Place potatoes in bottom of slow cooker. Beat cream cheese, soup and salad 
dressing mix together. Stir in potatoes. Cover and cook on low for 8 hours.
 
 






Chilled Potato Leek Soup-Karri Ann Allrich

2 tablespoons extra-virgin olive oil
1 medium Vidalia onion, diced
3 medium leeks, white parts only, chopped
4 medium potatoes, peeled, thinly sliced
4 cups vegetable broth
Salt
Pepper
Half-and-half
Fresh chives or parsley, chopped

In a heavy soup pot, heat the olive oil over medium heat and sauté the 
onion for 5 minutes. Add the leeks and potatoes, stirring for 1 minutes. Add 
the 
broth, salt, and pepper. Lower the heat and simmer for 30-40 minutes, until 
the potatoes are very tender and the broth is flavorful.

Ladle a portion of the soup into a blender, cover, and puree for 2-3 
minutes, adding in the half-and-half to thin to the desired consistency. Pour 
into 
a s torage container and repeat for the rest of the soup (A hand blender 
can also be used to puree the soup in the soup pot). Cover and chill for 
several hours before serving.

Serve with chopped chives or parsley.
 
 
 




Curried Slaw- Karri Ann Allrich

3 cups thinly shredded white cabbage
3cups thinly shredded red cabbage
1-cup nonfat pla in yogurt
3 tablespoons orange juice
1 teaspoon orange zest
1 tablespoons sherry vinegar
1-teaspoon honey mustard
2 garlic cloves, minced
1-teaspoon curry powder
½ teaspoon ginger
¼ cup toasted cashew pieces

In a large bowl, combine the shredded cabbages. In a small mixing bowl, 
make the dressing by combing the yogurt, orange zest, orange juice, vinegar, 
mustard, garlic, and spices. Whisk together well. Pour over the shredded 
cabbage and toss well to coat. Cover and chill for 2 hours. Add in the cashew 
just before serving.

Linguine With Tomatoes  Basil

6 very ripe large tomatoes, peeled, seeded, and cut into bite-sized pieces
1 cup extra-virgin olive oil
1 cup fresh basil leaves, cut into strips
1 cup freshly grated Parmesan cheese
3/4 cup sliced black olives
1/2 cup sliced pimiento-stuffed green olives
4 cloves garlic, minced
1 tablespoon salt
1 teaspoon coarsely ground pepper
1 (16-ounce) package uncooked linguine pasta
Freshly grated Parmesan cheese

In a large bowl, combine tomatoes, olive oil, basil, Parmesan cheese, black 
olives, green olives, garlic, salt, and pepper; stir until blended. Cover 
and let stand at room temperature 2 hours.

Cook pasta according to package directions; drain and return to pan. Add 
tomato mixture and toss to=2 0coat thoroughly. Transfer onto individual 
serving plates and garnish with additional parmesan cheese
 
 





Setting Sun Taco Salad
1 pound ground beef
1/4 cup green bell pepper, chopped
1 package dry taco mix
1/2 cup sliced ripe olives
3/4 cup water
1 cup shredded sharp cheddar cheese
1 med head lettuce, shredded
1 6oz package corn chips
1 large tomato, halved and sliced
1 small onion, sliced and rings separated

In skillet, brown the ground beef. Sprinkle in the package of taco mix and 
stir in the water. Simmer uncovered for approximately 10 minutes. In a salad 
bowl, combine all the rest of the ingredients except the chips. Divide 
salad onto 4-6 plates, spoon meat mixture on top, and garnish with chips
 
 





Garden Vegetable Linguini with Mint- Karri Ann Allrich

1-pound linguini
2 tablespoons extra-virgin olive oil
1 onion, sliced into chunks
4-5 garlic cloves, minced
½ large red pepper, cored, seeded, sliced into chunks
1 cup eggplant, peeled, cubed
6 cremini or button mushrooms, sliced
¾ cup plain yogurt
1 cup shredded Parmesan cheese
Juice of half a lemon
½ cup chopped fresh mint
Pepper
Fresh mint leaves

Bring salted water to a rolling boil in a large pot and cook the pasta 
until al dente. Heat the olive oil in a skillet over medium heat and sauté the 
onion for 5 minutes. Add the garlic, red pepper, eggplant, and mushrooms and 
sauté 5-7 minutes.

In a small nonstick saucepan gently heat the yogurt and add in the 
Parmesan, stirring well. Sprinkle the lemon juice on the vegetables and toss in 
the 
mint. Add some freshly ground pepper and season to taster.

When the pasta is done, drain and pour it into a pasta-serving bowl.  Add 
the yogurt Parmesan sauce and toss well. Cover the pasta with the sautéed 
vegetables and garnish with mint.

Cold Tomato Soup

2 large tomatoes, peeled, seeded, and chopped
1 sweet pepper, seeded and chopped
1 clove garlic, peeled and chopped
3/4 C. Herb blend, basil, chives, tarragon, parsley, dill, chervil, thyme
1/2 C. olive oil
3 tbsp. lemon juice
3 C. cold water
1 sweet Spanish onion, peeled and sliced
1 C. cucumber, peeled, seeded, and sliced
1/2 tsp. paprika

Put chopped tomatoes, pepper, garlic and herbs in a bowl. Stir in olive 
oil, lemon juice, and cold water. Add onion, cucumber, and paprika. Chill in 
refrigerator for about 5 hours. Serve over ice cubes in bowls and garnish with 
fresh parsley or watercress.




Avocado Egg Scramble

1 avocado
Salt
8 eggs
1/2 cup dairy sour cream
1 teaspoon seasoned salt
1/4 teaspoon pepper
1 tablespoon butter

Cut avocado lengthwise into halves, remove seed and skin. Dice avocado and 
sprinkle lightly with salt. Beat eggs with sour cream, seasoned salt and 
pepper. Melt butter in skillet, tipping to coat all sides. Add egg mixture and 
cook slowly, stirring now and then. When almost set, carefully fold in 
avocado. Serve at once.





Solstice Herb Bread

3 C. flour
1 tbsp. sugar
1 tsp. salt
1 pkg. dry active yeast
2 tbsp. chopped fresh chives
2 tsp. chopped fresh rosemary
1 tsp. fresh thyme
1 1/4 C. hot water
2 tbsp. Crisco

Mix 2 cups of the flour, sugar, salt and yeast in a large bowl. Add herbs, 
water, and Crisco. Beat slowly, stirring in remaining cup of flour until 
smooth. Scrape batter from sides of bowl and let rise in a warm place for 35 
minutes or until it doubles in bulk. Punch down and beat with a spoon for 
about 15 seconds. Place dough in a greased loaf pan, patting down and forming a 
loaf shape with your hands. Cover and let rise again for about 30 minutes or 
until it again doubles in bulk. Bake at 375 for 40-45 minutes. Brush top 
with butter or margarine and remove from pan to cool.

Georgia Peach Bread

This is so good toasted and buttered for breakfast,
or just a snack.
-
Makes:  2 loaves
-
1-1/2 cups sugar
1/2 cup shortening
2 eggs
2-1/4 cups pureed peaches
2 cups all-purpose flour
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1 cup finely chopped pecans
.
Low Down: Use a sugar substitute, such as SPLENDA,
your favorite egg substitute  a salt substitute.
=
Pit  slice enough peaches to make the required
amount of puree. Creamsugar  shortening together.
Add eggs; mix thoroughly. Add peach puree 
dry ingredients. Mix thoroughly. Add vanilla  chopped
pecans; stiruntil blended. Pour into 2 loaf pans approx
5 x 9  that have been well greased  floured. Bake at
325 ° F for 55 min - 1 hr. Let bread cool a
few min before removing from pan.

Canada Day Flag Cake 


Sponge Cake
1 1/2 cups cake-and-pastry flour 
1/4 teaspoon salt
5 eggs, separated 
1 pinch cream of tartar 
1 1/2 cups granulated sugar
3/4 teaspoon finely grated orange rind 
1/3 cup orange juice 
Filling and decoration
8 cups strawberries 
3 cups whipping cream 
1/4 cup icing sugar 
1 teaspoon vanilla or 2 tablespoons orange liqueur 
1 First, make the cake.  

2 Preheat oven to 350F; have ready an ungreased 13x9 oblong pan. 
3 Using a flour sifter, sift together flour and salt, then return to sifter 
and set aside. 
4 In large mixing bowl, beat egg whites until foamy; sprinkle with cream of 
tartar and beat until soft peaks form. 
5 Gradually add half of the sugar to the whites, beating until stiff glossy 
peaks form. 
6 In another large mixing bowl, beat egg yolks and remaining sugar until 
thickened; stir in orange rind and juice. 
7 Fold this into the egg whites. 
8 Sift flour, a third at a time, over the egg mixture, gently folding in 
each addition. 
9 Place this batter into the 13x9 pan and bake in preheated oven for 20 to 
25 minutes, or until spongy to a light touch. 
10 Let cool in pan for 10 minutes, then turn cake out onto a wire rack to 
let it cool completely (if possible, wrap and store for 1 day; cake can also 
be frozen for up to 2 months). 
11 When ready, make the filling and decoration. 
12 Hull and slice about one-quarter of the strawberries. 
13 Whip the cream; stir icing sugar and vanilla into whipped cream. 
14 Using a long serrated knife, cut cake horizontally in half and put one 
layer, cut side up, on a large serving tray. 
15 Spread with about one-third of the whipped cream mixture and cover with 
a single layer of sliced strawberries. 
16 Carefully put the top layer, cut side down, over the berries. 
17 Spread remaining cream over top and sides. 
18 Now, cut the remaining berries in half and arrange in overlapping rows, 
cut side down, forming 2 side bands and a maple leaf in centre. 
19 Use any remaining berries as a garnish around the sides of the cake.

Paula Deen's Gooey butter cake 

Cake
1 (18.25-ounce) box yellow cake mix
1 egg
1/2 cup (1 stick) butter, melted 

Filling 
1 (8-ounce) package cream cheese, softened
2 eggs 
1 teaspoon pure vanilla extract
1 (16-ounce) box confectioners' sugar
1/2 cup (1 stick) butter, melted 

Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking pan. In
the bowl of an electric mixer combine cake mix, egg and butter and mix
well. Pat into the bottom of prepared pan and set aside. Still using an
electric mixer beat cream cheese until smooth add eggs and vanilla. Dump
in confectioners sugar and beat well. Reduce speed of mixer and slowly
pour in butter. Mix well. Pour filling onto cake mixture and spread
evenly. Bake for 40 to 50 mins. Don't be afraid to make a judgment call
on the cooking time because oven temps can vary. You want the center to
be a little gooey so don't bake it past that point! Remove from oven and
allow to cool completely. Cut into squares. 
=
Pumpkin Gooey: For this variation you can use either a yellow or spice
cake mix. Follow the original recipe, adding a 15-ounce can of pumpkin
pie filling and an extra egg to the cream cheese filling. Bake as usual,
remove from oven, and allow to cool. Cut into squares and top each
square with a pecan half. Serve with a dollop of whipped cream. 
=
Double Chocolate - use a devil's food or chocolate fudge cake mix, and
add 4 Tbs cocoa powder to the topping. Can add a cup of chopped nuts to
the cream cheese filling, if desired. 
=
Pineapple Gooey: Add a 20-ounce can of drained crushed pineapple and an
extra egg to the cream cheese filling. Proceed as directed above. 
=
Lemon Gooey: Use a lemon cake mix in place of the yellow cake. Add the
juice (approximately 1/4 cup) and zest of 2 lemons to the cream cheese
filling. Proceed: as directed above. 
=
Carrot Cake Gooey: Use a spice cake mix, and add 1 cup chopped nuts and
1 1/2 cup finely grated carrots to the cream cheese filling. Proceed as
directed above. 
=
Peanut Butter Gooey: Use a chocolate cake mix. Add 1 cup creamy peanut
butter and an extra egg to cream cheese filling. You can sprinkle the
top of batter with 1 cup chopped peanuts if you like. Proceed as
directed above. 
=
Chocolate Chip Gooey: Use either yellow or chocolate cake mix. Sprinkle
1 cup chocolate chips and 1 cup chopped nuts on top of filling. Proceed
as directed above.

Banana Gooey: Use a yellow cake mix. Prepare cream cheese filling as
directed, beating in 2 ripe bananas and an extra egg. Proceed as
directed above. 
=
Nutty Gooey: Use a yellow cake mix, and add 1 cup chopped nuts to the
cake mixture. Proceed as directed above. 
=
Elvis Gooey: Use a yellow cake mix. Prepare cream cheese filling as
directed, beating in 1/2 cup peanut butter, a ripe banana and an extra
egg. Proceed as directed above. 
=
Chippy Gooey: Stir 1 cup white chocolate chips, peanut butter chocolate

4 eggs - beaten
20 oz. can crushed pineapple - drained
6 slices white bread - torn in cubes
 
Preheat oven to 375
In large bowl, mix all ingredients well, add mixture to buttered baking 
dish,  
Bake for 45 minutes to 1 hour...or until bubbling and browned.

* 
  (1).* Ham with my special bread crumb coating.*
 I took a boneless ham,(the long,round kind)  sliced slabs about 
 half an inch thick.
Place the slabs in an 8x11 metal baking pan with a little extra light olive 
oil.
In a small bowl I mixed about a cup or so of plain bread crumbs, 4-5 Tbs. of
unsweetened applesauce,a sprinkle of Adobo seasoning,a small amount of 
Splenda Brown Sugar altogether into pasty ball.
I coated the ham slabs with this mixture   on some I put a few pineapple 
rings.
I them baked in a pre-heated oven at 350 degrees for about 30 minutes or 
until the coating was light brown. *Thicker slabs take a little longer.*
I've done it with pork butt steaks,also. Mmmm.Mmmm!
 
(2). *Chicken w/ seasoned bread crumbs  honey.*
  2-4  Boneless chicken breasts.
In a large (gallon size) Zip Loc bag I put the bread crumb  seasonings.
*Plain bread crumbs, black pepper,pinch of salt,Adobo,dill weed or 
flakes,parsley
flakes,sage or rosemary.
Rub the chicken with extra light olive oil.
Drop in the bag with the bread crumbs. Shake until well coated.
Place in an ( I used) 8x11 metal baking pan. {Mine is the blue w/white 
specks kind.}
Cover with aluminum foil. Bake at 350 degrees for 30 minutes.
After 25 minutes,remove the foil.
Just before you take it out of the oven,drizzle a little honey on it slowly 
to coat
it lightly. Turn off ovenlet it set in there for about 5 minutes or so.
*Very tasty  tender.*  
Nice sweet  spicey flavor.

1 medium cucumber (peeled and slice thin)
2 cans frozen limeade concentrate
2 liters Sprite
 
Marinate cucumber slices overnight in 2 cans frozen concentrate limeade, 
mixed in a large mixing bowl.  Use plastic bowl, never metal.  In a large 
punch bowl, dump mixture of limeade and cucumbers.  Pour sprite over limeade 
mixture until punch bowl is almost full.  Add crushed ice and garnish the top 
with floating lime wheels.
 
a friend of mine from church thought of this recipe for a party.

8 ounces Cream cheese -- softened
1 can Sweetened condensed milk
1/3 cup ReaLemon Lemon Juice
1 teaspoon Vanilla extract

1/4 cup Red cinnamon candies
6 tablespoons Water
2 teaspoons Cornstarch

In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened 
condensed milk until smooth. Stir in lemon juice and vanilla. Pour into 
prepared pastry shell. Arrange apple slices over filling. In small saucepan, 
over LOW heat, dissolve cinnamon candies in 1/4 cup water. Stir together 
remaining 2 tbs. water and cornstarch; add to cinnamon mixture. Cook and stir 
until mixture thickens and boils. Remove from heat; cool slightly. Drizzle over 
apples. Chill 3 hours or until set. Refrigerate leftovers.

Use it like a salsa or dip for wontons or eggrolls.

Devil's Blood 

7 ozs. cayenne peppers, fresh or sub with jalapeno's
1 tbsp. honey or maple syrup
1 tbsp. liquid smoke 
2 tbsps. cognac

Roast the chiles until the skin start to blacken. Let them cool. Skin and 
seed the
chiles. 
Mix chiles, honey, cognac and salt in a food processor on high speed until 
you get a
smooth paste.
Boil the paste 5 minutes and fill it in small glass jars. Will keep for 
many months in
the refrigerator.

Broccoli Casserole

2 (10 ounce) packages frozen chopped broccoli 
8 ounces processed cheese food, shredded 
1/4 pound butter 
32 buttery round crackers, crushed 

Preheat oven to 350 degrees F (175 degrees C). 
Place broccoli in casserole dish and cover with cheese. 
In a large skillet over medium heat, melt the butter; add the cracker 
crumbs and stir until evenly coated. Sprinkle over cheese. 
Bake for 30 minutes.

1 lb. fresh crabmeat
4 slices bacon, diced
3/4 c. chopped onion
2 med. potatoes, diced
1 1/2 c. water
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dill weed
1 can whole kernel corn (or fresh or frozen)
1 1/2 tbsp. flour
1 c. Half and Half
1 tbsp. fresh parsley
1 1/2 tbsp. butter
 
Saute onions and bacon in butter. Add potatoes, water and seasonings. Cook 
until potatoes are soft. Add corn and Half and Half and milk. Heat. Thicken 
with flour and butter. Add crabmeat. Heat through. Garnish with parsley.

Cherry Bell Cookies

3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon instant coffee granules
1 cup butter
1 1/4 cups packed brown sugar
1/4 cup dark corn syrup
1 egg, beaten
1 tablespoon cream
1/3 cup packed brown sugar
1 tablespoon butter
3 tablespoons cherry juice
1 1/2 cups chopped walnuts
60 maraschino cherries, halved

Sift together: 3 cups flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1
teaspoon ginger and 1/2 teaspoon instant coffee. Put aside.
Cream 1 cup butter or margarine. Add 1 1/4 cups brown sugar. Cream well.
Blend in dark corn syrup, egg, and cream. Add dry ingredients and mix well.
Roll out dough, 1/3 at a time on floured board to 1/8 inch thickness. Cut
cookies into 2 1/2 inch rounds. Place on ungreased cookie sheet.
To Make Filling: Combine 1/3 firmly packed brown sugar, 1 tablespoon
butter, 3 tablespoons cherry juice. Stir in 1 1/2 cups chopped nuts, chopped 
fine.
Place 1/2 teaspoon filling in center of each round. Shape into a bell by
folding sides of dough to meet over the filling using spatula to fold over
sides. Make top of bell narrower than at the clapper end. Place 1/2 of a
maraschino cherry (cut side down) at open end of each bell for clapper. Bake at
350 degrees F for 12-15 minutes.

Easy Stuffed Shells

1 (12 oz) pkg. jumbo pasta shells
1 (26 oz) jar spaghetti sauce
36 frozen cooked Italian meatballs thawed
2 C. shredded part skim mozzarella cheese

Cook pasta according to package directions; drain and rinse in cold water.
Place 1/2 cup sauce in a greased 9x13 baking dish.  Place a meatball in
each shell.  Transfer to a prepared dish.  Top with remaining sauce and
sprinkle with cheese.
Cover and bake at 350 for 35 minutes.  Uncover, bake 5-10 minutes longer or
until bubbly and cheese is melted.

INGREDIENTS:
3 bananas
6 wooden ice-cream sticks
1 cup orange juice
1 cup milk-chocolate pieces
2 tablespoons vegetable oil
3/4 cup chopped peanuts (optional)
3/4 cup shredded coconut (optional)

Cover baking sheet with waxed paper; set aside. slice peeled
bananas in half crosswise and insert stick. Dip into orange
juice. Place in freezer untill firm. Melt chocolate peices
and vegetable oil in top of double boiler. Spoon melted
chocolate evenly over bananas. Chocolate will harden fast,
so work rapidly. Roll coated bananas in chopped peanuts or
shredded coconut. Serve immediately or wrap in plastic wrap
and freeze.

Yield: Serves 6

Coffee can ice cream

Vanilla ice cream:
1 cup heavy cream
1 cup light cream
1 beaten egg (or use equivalent reconstituted dried)
1/2 cup sugar
1 tsp. Vanilla extract

Chocolate Ice Cream
1 cup heavy cream
1 cup light cream
1/2 cup sugar
4 tablespoons cocoa
1/2 tsp. Vanilla extract
1/8 tsp. Salt

Coffee Ice cream
1 cup heavy cream
1 cup light cream
2 tablespoons instant coffee granules
1/2 cup sugar
1/8 tsp. Salt

For all varieties:
In 1 lb. Coffee can mix all ingredients. Seal can lid well with duct tape.
Put small, sealed can inside larger 3 lb. Can. Pack ice and 1 cup salt
around small can. Put lid on large can and duct tape closed. Roll back  forth 
on
a large towel (optional) for 15 minutes. Open large can and dump ice and
water. Wipe small can dry and open. Stir mix, scraping sides of can.
Additional ingredients, e.g.. Cookie crumbs, chopped nuts, can be added now. 
Reseal
small can and place back in larger can. Repack with salt and ice. Continue
rolling for 10 minutes more. Open large can and dump ice and water. Wipe small
can dry and open. Enjoy!




ICE CREAM IN A BAGGIE:

Put in a sandwich-size Zip-Loc bag and zip closed: 1 tablespoon sugar 1/2
cup milk or half  half 1/4 teaspoon vanilla

Put in a gallon-size Zip-Loc bag and zip closed: 2 T. Rock salt (baking
aisle in grocery) the filled and zipped sandwich bag from above ice cubes to
fill bag about 3/4 full Shake and roll filled bag over and over until frozen
(about 15-20 min.) YUMMY!!

As the ice melts it does leak a little so do outside





After your next big snowfall let the children gather a big bowl of snow.
Make sure they skim it off the tops of car or outdoor furniture so it will be
clean. Add sugar and vanilla to taste and milk to desired consistency. Yummy
and fun!

Filling:
1 (8 oz) pkg. cream cheese softened
1/3 C. sugar
1 egg
1/8 t. salt
1 C. flaked coconut
1 C. finely chopped walnuts
1 C. miniature semisweet chocolate chips

Batter:
2 C. sugar
1 1/2 C. water
3/4 C. canola oil
2 eggs
2 t. vanilla extract
1 t. white vinegar
3 C. all purpose flour
1/2 C. baking cocoa
1 t. baking soda
1 t. salt

Frosting:
1 1/3 C. semisweet chocolate chips
1/2 C. heavy whipping cream

For filling, in a small bowl beat cream cheese and sugar until light and
fluffy.  Add egg and salt; mix well.  Stir in the coconut, walnuts and
chocolate chips.  Set aside.
For batter, in a large bowl beat the sugar, water, oil, eggs, vanilla and
vinegar until blended.  Combine the flour, cocoa, baking soda and salt,
gradually beat into oil mixture until blended.
Fill paper lined miniature muffin cups one third full with batter.  Drop
filling by teaspoonfuls into center of each.  Top with additional batter,
filling muffin cups three fourths full.
Bake at 350 for 12-15 minutes or until a toothpick inserted in cake portion
of a cupcake comes out clean.  Cool for 10 minutes before removing from
pans to wire racks to cool completely.
For frosting, in a small saucepan melt chocolate with cream over low heat;
stir until blended.  Remove from the heat.  Cool to room temperature.  Frost
cupcakes.  Refrigerate leftovers.

Eggnog and Cranberry Salad

1 (3.5 ounce) package instant vanilla pudding mix
1 (3 ounce) package lemon flavored gelatin
2 cups water
2 tablespoons lemon juice
1 (3 ounce) package raspberry flavored gelatin mix
1 cup boiling water
1 (16 ounce) can jellied cranberry sauce
1/4 cup chopped pecans
1 (1.3 ounce) envelope whipped topping mix
1/2 teaspoon ground nutmeg

Combine vanilla pudding mix, lemon gelatin, and 2 cups water in a saucepan.
Bring to a boil, stirring constantly. Stir in lemon juice. Chill until
partially set.
Dissolve raspberry gelatin in 1 cup boiling water. Blend in cranberry
sauce, and add pecans. Chill until partially set.
Prepare whipped topping according to package directions. Fold in nutmeg.
Fold whipped topping into vanilla pudding mixture. Pour into a 9 x 13 inch
glass dish. Chill until firm.
Pour cranberry mixture over pudding mixture. Chill for 6 hours before
serving to appreciative family and friends.
