You wouldn't by any chance have SpamSieve installed? SpamSieve could be set up playing a sound when good mail arrives. In addition to dragging the message to create a link, you have Edit > Copy as Link (option+shift+command+C). You can also enable the bundle for the Task Manager of your choice. I've always used snippet expansion for entering signatures. TextExpander is my preferred app, but you can also use the system text replacement (System Preferences → Keyboard → Text-tab).
