Buongiorno,
secondo me è un problema di dato o di caricamento del dato in QGIS:
CIOè:
1. forse è stato convertito male da laz a xyz;
2. il file in xyz non ha intestazione e il separatore è uno spazio; quindi
l'importazione in QGIS, tramite aggiungi layer testo delimitato, deve essere
ben settata: EPSG 32632

allego un file .xyz che è la trasformazione del file laz; usa questo file
[0] e facci sapere:
quando importi in QGIS occhio all'intestazione e al separatore, inoltre stai
attendo se usi separatore decimale il punto o la virgola.

exported it to PDF.

Poi, con la 2.18, penultimo aggiornamento ricordo di esser riuscito a

quel menu dell'interpolazione, e non esser riuscito a creare più niente.

poi far tutto da dentro pdal senza passare da altri backend via qgis

o sia... pdal ti permette di rasterizzare alla risoluzione e algoritmo di
interpolazioen che desideri (writers.gdal)... ha anche dei filtri
morfologici implementati direttametne o usabili via altri backend. PMF e
SPMF son gia' abbastanza potenti trovando gli opportuni parametri.

se poi il raster e' nero... sciuro che la palette non sia scalata?

Col 2.18.28, non so qual'è in ordine di aggiornamento, mi pare
funzionava il menu di attributo interpolazione, mi ricordo di aver
aggiornato Debian e la stabile al 2.18.XX, non mi ricordo il numero, e
di lì mi si presentò il problema della disattivazione di quel menu, a
naso penso sia un bug, almeno su linux.

The Shape Tools  plugin may
have several tools to help. The plugin is installed in the Vector menu and
as a processing toolbox. The first tool is "Geodesic Measurement Layer"
This automatically creates a layer from a line layer that geodesically
measures all the distances between line nodes and outputs that as a new
attribute in the output table.

The second tool is an XY to line tool which expects two X,Y coordinates in
each record of a layer and creates an output line layer with the line drawn
between the two point.

Ho appena fatto una prova utilizzando il primo file in elenco
https://siat.provincia.tn.it/IDT/raster/.public/lidar_2006_pat_laz/

funziona tutto senza problemi.
PS per trasformare il file .laz ho utilizzato QGIS 2.18.28 che ha ancora gli
strumenti lidar in processing

Per quanto sappia io non è possibile eliminare campi di tabelle spatialite
da QGIS, unico modo è usare spatialite_gui.

É proprio quello che non capisco, non layer in edizione il bottone "cancella
campo" non si attiva.
e nemmeno nel DB manager.

Non ho mai provato il plugin che dici e non uso database spatial lite da
moltissimo. Ma tu hai attivato le modifiche sul layer (matita gialla)? Se
no non si attivano quei pulsanti.
In alternativa dovresti poter manipolare la tabella da dbmanager
