Hi Becky,
I never saw anything like that. Boy that's weird. There really isn't
much traffic on here anyway and do not know if anyone is really
moderating. We have been just kind of taking care of ourselves.
I hope you did not get viruses, that stuff is awful!

[RecipesAndMore] Taste Test

2010-06-25 Thread Jan
Hot Dogs
Published April 1, 2007. From Cook's Country.

Americans spend $1.5 billion on store-bought hot dogs. We compiled a
20-person tasting panel to determine where that money should be spent.

Hot dogs inspire passion. Just try handing a mustard-and-sauerkraut dog
to someone who takes ketchup and onions, and you'll see what I mean.
Passion begets consumption, and Americans spend over $1.5 billion on
store-bought hot dogs each year. To determine which all-beef hot dog is
best, we bought nine brands at our local supermarket and headed into the
test kitchen to cook and taste them.

Much to the chagrin of our 20-person tasting panel, condiments and buns
were off-limits--we wanted to taste the hot dogs and nothing but. All
dogs were boiled for exactly 4 minutes in water to cover, then sliced
into rounds and served warm. Tasters scored each sample on appearance,
flavor, texture, and overall quality. Who was the top dog?

Not surprisingly, our panel preferred dogs with rich, beefy flavor and a
good mixture of seasonings. We were surprised to find that sugar level
tracked with our final rankings: Our top three dogs all list 0 grams of
sugar, and all were praised for their meaty flavor. Those with 2 grams
of sugar per dog all finished toward the bottom of our rankings and were
criticized for their sweet, unnatural flavor.

Texture was also important. Testers wanted firm dogs that had some snap.
Samples with a soft, bologna-like texture were downgraded.

Winner
 Nathan's Famous Beef Franks
Our tasters heralded Nathan's dogs for their meaty, hearty, robust
flavor and firm, craggy texture.

Highly Recommended
  Nathan's Famous Beef Franks
Our tasters heralded Nathan's dogs for their meaty, hearty, robust
flavor and firm, craggy texture-all qualities that separate them
from the overprocessed competition. Juicy, crunchy, salty, yum, said
one happy taster.
 8 dogs $4.99 for 1 pound
Recommended
  Johnsonville Stadium Style Beef Franks
Tasters appreciated the girth and richness of these franks, which were
the largest in our tasting. Their flavor was described as big and meaty
but not hot-doggy, with a strong spice blend. Texture was deemed
good and firm.
 6 dogs $2.99 for 14 ounces
Recommended
  Hebrew National Beef Franks
These franks scored especially well for their crunchy, nice and
juicy texture and garlicky, spicy, beefy, and smoky flavor. One
gushing taster called them almost perfect-well seasoned and juicy.
 7 dogs $4.69 for 12 ounces
Recommended with Reservations
  Oscar Mayer Beef Franks
While some tasters liked Oscar Mayer's smoky, strong flavor, these
franks lost points for being ridiculously salty, mushy, and tasting
like a mixed-meat hot dog, not an all-beef one.
 10 dogs $3.99 for 1 pound
Recommended with Reservations
Kayem Deli Jumbo Beef Hot Dogs
Nothing fancy, like a hot dog should be, said one pleased taster. A
little greasy, but with good flavor, said another. Less glowing
comments included bland and sour, rubbery filling, and several
references to a strange and sweet aftertaste.
 8 dogs $3.99 for 1 pound
Recommended with Reservations
  Ball Park Beef Franks
One taster called these dogs classic but unremarkable. Negative
remarks included mushy, strange sweetness, and a mention of
unpleasant chewy membranes.
 8 dogs $3.99 for 1 pound
Not Recommended
  Boar's Head Skinless Beef Frankfurters
Tasters found something amiss with these rubbery, artificial-looking
(too red) hot dogs. While the flavor was deemed beefy, the chewy
texture was a big turnoff. Smells a little like wet socks, complained
one member of our panel.
 10 dogs $4.29 for 1 pound
Not Recommended
  Kahn's Bun Size Beef Franks
The general consensus was that these dogs taste like they have a lot of
filler and have a very processed texture. Most tasters complained
about too much salt and no meat flavor or texture. Like sour, salty
bologna, said one critic.
 8 dogs $3.99 for 1 pound
Not Recommended
Healthy Choice Low Fat Beef Franks
Our tasters didn't think these franks looked (strange dark color) or
tasted (livery undertones, plasticky) like hot dogs. The
gummy-mushy-grainy texture drew serious complaints.
 8 dogs $3.49 for 14 ounces

[RecipesAndMore] We Often Froget About Today

2010-06-14 Thread Jan
Today is Flag Day and I thought this was interesting:
You're a Grand Old Flag
From Wikipedia, the free encyclopedia

You're a Grand Old Flag

You're a Grand Old Flag is a patriotic song of the United States. The
song, a spirited march written by George M. Cohan, is a tribute to the
U.S. flag. In addition to obvious references to the flag, it
incorporates snippets of other popular songs, including one of his own.
Cohan wrote it in 1906 for George Washington, Jr., his stage musical.

The song was first publicly performed on February 6, the play's opening
night, at Herald Square Theater in New York City. You're a Grand Old
Flag quickly became the first song from a musical to sell over a
million copies of sheet music. The title and first lyric comes from
someone Cohan once met; the Library of Congress website notes:

The original lyric for this perennial George M. Cohan favorite came,

as Cohan later explained, from an encounter he had with a Civil War
veteran who fought at Gettysburg. The two men found themselves next to
each other and Cohan noticed the vet held a carefully folded but ragged
old flag. The man reportedly then turned to Cohan and said, She's a
grand old rag. Cohan thought it was a great line and originally named
his tune You're a Grand Old Rag. So many groups and individuals
objected to calling the flag a rag, however, that he gave 'em what
they wanted and switched words, renaming the song You're a Grand Old
Flag.
- Library of Congress

In the play itself, the scene with the Civil War soldier was replicated.

The soldier's comment was the lead-in to this song. Thus the first
version of the chorus began, You're a grand old rag / You're a
high-flying flag. Despite Cohan's efforts to pull that version, some
artists such as Billy Murray had recorded it under its original title,
The Grand Old Rag, in advance of the play's opening, and many copies
under that title still circulate among collectors. Cohan's second
attempt at writing the chorus began, You're a grand old flag / Though
you're torn to a rag. The final version, with its redundant rhyme, is
as shown below.

The song was used in a major production number in Cohan's 1942 film
biography, Yankee Doodle Dandy.

Recordings by Pride of the 48 and Catalina Strings, were used in the
film Born on the Fourth of July (film) (1989).

Verse 1

There's a feeling comes a-stealing,
And it sets my brain a-reeling,
When I'm listening to the music of a military band.
Any tune like Yankee Doodle
Simply sets me off my noodle,
It's that patriotic something that no one can understand.

Way down south, in the land of cotton,
Melody untiring,
Ain't that inspiring?

Hurrah! Hurrah! We'll join the jubilee!
And that's going some, for the Yankees, by gum!
Red, white and blue, I am for you!
Honest, you're a grand old flag!

Verse 2

I'm no cranky hanky panky,
I'm a dead square, honest Yankee,
And I'm mighty proud of that old flag
That flies for Uncle Sam.
Though I don't believe in raving
Ev'ry time I see it waving,
There's a chill runs up my back that makes me glad I'm what I am.

Here's a land with a million soldiers,
That's if we should need 'em,
We'll fight for freedom!

Hurrah! Hurrah! For every Yankee tar
And old G.A.R.
Ev'ry stripe, ev'ry star.
Red, white and blue,
Hats off to you
Honest, you're a grand old flag!

Chorus

You're a grand old flag,
You're a high flying flag
And forever in peace may you wave.

You're the emblem of
The land I love.
The home of the free and the brave.

Ev'ry heart beats true
'neath the Red, White and Blue,
Where there's never a boast or brag.

But should auld acquaintance be forgot,
Keep your eye on the grand old flag.

Hi Folks,

You may recall, I've been reading The White House Family Cookbook.

Well, below is the last of the recipes which I took from that source.

I am looking through the Yellow Farmhouse Cookbook now. I'll share
anything I come across.

Take Care,

Sherri

President Reagan's Whole Wheat Muffins

1 c. whole wheat flour
1 c. all-purpose flour
4 tsp baking powder
1/2 tsp salt
3/4 c. light brown sugar
3/4 c. coarsely chopped walnuts
3/4 c. seedless raisins
1 c. milk
2 eggs, beaten
2/3 c. melted vegetable shortening

Preheat oven to dg425.

Grease 18-muffin tin cups and dust with flour, or use paper muffin cup
liners.

Sift together flour, baking powder and salt.

In large bowl combine dry ingredients with brown sugar, nuts and
raisins.

Combine milk and beaten eggs in small bowl. Mix in shortening and blend
well.

Stir milk mixture into dry ingredients and combine until just moist. (Do
not overmix.)

Divide batter evenly among muffin cups--filling each a little more than
half full. Bake 15 to 20 minutes until evenly browned and tests done.

Cool on wire racks 5 minutes before removing muffins from tins.

Yield 18 muffins.

[RecipesAndMore] Hints

2010-02-19 Thread Jan
Eliminate ear mites. All it takes is a few drops of WessonR Corn Oil in
your cat's ear. Massage it in, then clean with a cotton ball. Repeat
daily for 3 days. The oil soothes the cat's skin, smothers the mites,
and accelerates healing.

Kills fleas instantly. DawnR Dishwashing Liquid does the trick. Add a
few drops to your dog's bath and shampoo the animal thoroughly. Rinse
well to avoid skin irritations. Good-bye fleas.

Rainy day cure for dog odor: Next time your dog comes in from the rain,
simply wipe down the animal with BounceR or any dryer sheet, instantly
making your dog smell springtime fresh.

Did you know that drinking two glasses of GatoradeR can relieve headache
pain almost immediately-without the unpleasant side effects caused by
traditional pain relievers?

[RecipesAndMore] FW: A Really Good Story

2010-02-18 Thread Jan
Did They Have to Die?
Forty years after five missionaries lost their lives in the Ecuadorian
jungle, the killers
explain what really happened.
Steve Saint
The year of Christianity Today's birth also brought the death of five
American missionaries in Ecuador:
Nate Saint, Jim Elliot, Roger Youderian, Ed McCully, and Peter Fleming.
The story of what happened on
that January day in 1956-first told in newsweeklies and Life magazine
and then in numerous books and
documentaries-became a primary narrative for the young evangelical
movement, reinforcing and
illustrating to the world our core ideals. Their noble sacrifice and the
heroic follow-up work of family
members like Rachel Saint, the sister of Nate, and Jim Elliot's widow,
Elisabeth, inspired a generation of
Christians-some to go to the mission field and many more to live a more
mature and sacrificial Christian
life.
While the story is familiar, many of the details have been unknown. Why
were the missionaries attacked,
especially after such promising initial contacts with their eventual
killers, the Huaorani? Why didn't the
missionaries use their guns to defend themselves?
Steve Saint grew up with these questions about the final moments of his
father's life. Despite spending
school vacations among and working with the now-Christian Huaorani,
Steve only recently has gotten
his answers-which have served to make the story even more amazing and
inspiring still.
This article, like our August cover story, appears as a chapter in
Martyrs: Contemporary Writers on
Modern Lives of Faith, a collection of essays edited by Susan Bergman
(Harper San Francisco).
As I made my final approach to the short jungle airstrip, I could tell I
was coming in a little high. I
pushed the flap lever all the way down, but it still wasn't going to be
enough to get me down on the tiny
mud-and-grass strip. I decided to pick up speed, staying on the approach
glide path to get the feel for my
next try. I had just spent three weeks building a new airstrip with the
Huaorani people in Ecuador, but
this was my first landing in Huaorani/Auca territory, and this little
strip wasn't exactly what the engineers
had in mind when they designed this Cessna 172.
Racing down the field just ten feet in the air, I could clearly see the
faces of the Huaorani people lining
the strip. As I pulled up and banked to the left to start another
approach, I could see the river and what is
left of the sandbar where my father, Nate Saint, had made his first
approach, the very first approach ever
in Huaorani territory, just 40 years ago. He and fellow missionaries Jim
Elliot, Ed McCully, Pete
Fleming, and Roger Youderian had set up camp on that little sandbar in
hopes of making contact with the
primitive Aucas, known for their fierce infighting and hatred of
outsiders. The five missionaries had a
deep burden to share the gospel message with a people known only for
hunting and killing. Their initial
friendly contact ended in death by spearing.
On my second try, I was right on the numbers. Crossing the final bushes,
I cut the power and the wheels
touched down solid, just ten feet from the mark I had chosen. I hopped
out to say hello, but I was in a
hurry to take off again before the afternoon thunderheads started to
drop their torrential rains and trap my little plane in mud, making a
takeoff impossible. Dad, I remembered, had flown the Piper Family
Cruiser
off the beach each afternoon for much the same reason while awaiting the
first contact with the
savages, as the Quechua word Auca means.
So much was the same, and yet circumstances were so different! The past
three weeks I had been carving
a new airstrip out of the virgin jungle with the people (which is what
their own Huaorani word means),
some of whom had murdered my father and his friends just before my fifth
birthday.
Mincaye was one of them. Mincaye, with whom I had just gone hunting, who
laughed and joked about
everything, who had tried the hula hoop on his first friendly contact
with the outside. He had been on the
beach that fateful day in 1956. There was no laughing on that visit.
Dyuwi, shy, sweet Dyuwi, who hung around our camp each night waiting for
a break in the conversation
so he could thank Wangongi (creator God) for keeping us safe from
falling trees, Konga ants, and
poisonous snakes: he too had been there. Just a teenager then, and
certainly just as shy, he was
nevertheless an up-and-coming killer who knew what they had come to do
and went about it-no doubt
with the same vigor I had seen him demonstrate on a huge stump he'd been
working for the last three
days to clear from our landing strip.
Kimo, who brought his canoe full of provisions so we would have plenty
to eat while we worked on the
strip, had also been there in 1956. He told me that the last of the five
young cowodi (foreigners/strangers)
had fled across the river, away from the attack, and instead of fleeing
into the jungle and safety,

Now this is the Living Bible:

His name is Bill.. He has wild hair, wears a T-shirt with holes in it,
jeans, and no shoes. This was literally his wardrobe for his entire four
years of college.

He is brilliant.. Kind of profound and very, very bright. He became a
Christian while attending college.

Across the street from the campus is a well-dressed, very conservative
church. They want to develop a ministry to the students but are not sure
how to go about it.

One day Bill decides to go there. He walks in with no shoes, jeans, his
T-shirt, and wild hair.. The service has already started and so Bill
starts down the aisle looking for a seat.

The church is completely packed and he can't find a seat. By now, people
are really looking a bit uncomfortable, but no one says anything.

Bill gets closer and closer and closer to the pulpit, and when he
realizes there are no seats, he just squats down right on the carpet.

By now the people are really uptight, and the tension in the air is
thick.

About this time, the minister realizes that from way at the back of the
church, a deacon is slowly making his way toward Bill.

Now the deacon is in his eighties, has silver-gray hair, and a
three-piece suit. A godly man, very elegant, very dignified, very
courtly. He walks with a cane and, as he starts walking toward this boy,
everyone is saying to themselves that you can't blame him for what he's
going to do.

How can you expect a man of his age and of his background to understand
some college kid on the floor?

It takes a long time for the man to reach the boy.

The church is utterly silent except for the clicking of the man's cane.
All eyes are focused on him.. You can't even hear anyone breathing. The
minister can't even preach the sermon until the deacon does what he has
to do.

And now they see this elderly man drop his cane on the floor. With great
difficulty, he lowers himself and sits down next to Bill and worships
with him so he won't be alone.

Everyone chokes up with emotion.

When the minister gains control, he says, 'What I'm about to preach,
you will never remember. What you have just seen, you will never
forget.'

'Be careful how you live. You may be the only Bible some people will
ever read!'

what are they made from, who developed the process and when was the
process developed?

2) What do basil, marjoram, oregano, sage and rosemary have in common?

3) What dessert ingredient was inspired by a perfume for gloves?

4) What are the only two food preferences humans are supposedly born
with?

5) What are the top 3 'farmed' fish crops in the U.S.?

Answers

1) Surimi. Those seafood items that look like crab, scallops, etc. but
are really mostly white fish fillets, are thought of by most people as
some sort of modern high tech imitation product. They go by such names
as 'sea legs', imitation crab or imitation shrimp, etc. In reality, this
process was developed in Japan several hundred years ago when the
Japanese discovered that mincing fish flesh, washing it and then heating
it, caused a natural gelling of the flesh. If this was then mixed with
other ingredients and steamed, the resulting 'fish cake' (kamaboko)
stayed together as though it were a natural product.

2) They are all in the mint family.

3) Frangipane is a rich pastry cream flavored with ground almonds and
used to fill or top pastries and cakes. The name has a very unusual
origin. In the 16th century an Italian nobleman, Marquis Muzio
Frangipani, created a perfume for scenting gloves. It was popular in
Paris, and pastry cooks flavored pastry cream with almonds and called it
'frangipane', presumably to take advantage of the scents popularity.

4) Humans only have two basic food preferences that we are born with; a
liking for sweet foods, and a dislike for bitter foods. All other
preferences are learned, either culturally or by personal experience
which may cause us to associate certain tastes or foods with unpleasant
or pleasant moments. Medical disorders may also cause a craving or
revulsion for certain foods.

5)
Catfish is the largest 'crop', followed by crawfish and the third
largest 'crop' is rainbow trout.

Now this is the Living Bible:

His name is Bill.. He has wild hair, wears a T-shirt with holes in it,

jeans, and no shoes. This was literally his wardrobe for his entire
 four years of college.

He is brilliant.. Kind of profound and very, very bright. He became a
 Christian while attending college.

Across the street from the campus is a well-dressed, very conservative

church. They want to develop a ministry to the students but are not
sure how to go about it.

One day Bill decides to go there. He walks in with no shoes, jeans,
his T-shirt, and wild hair.. The service has already started and so
Bill starts down the aisle looking for a seat.

The church is completely packed and he can't find a seat. By now,
people are really looking a bit uncomfortable, but no one says
 anything.

Bill gets closer and closer and closer to the pulpit, and when he
realizes there are no seats, he just squats down right on the carpet.

By now the people are really uptight, and the tension in the air is
 thick.

About this time, the minister realizes that from way at the back of
the church, a deacon is slowly making his way toward Bill.

Now the deacon is in his eighties, has silver-gray hair, and a
three-piece suit. A godly man, very elegant, very dignified, very
courtly. He walks with a cane and, as he starts walking toward this
boy, everyone is saying to themselves that you can't blame him for
 what he's going to do.

How can you expect a man of his age and of his background to
understand some college kid on the floor?

It takes a long time for the man to reach the boy.

The church is utterly silent except for the clicking of the man's
cane. All eyes are focused on him.. You can't even hear anyone
breathing. The minister can't even preach the sermon until the deacon
does what he has to do.

And now they see this elderly man drop his cane on the floor. With
great difficulty, he lowers himself and sits down next to Bill and
worships with him so he won't be alone.

 Everyone chokes up with emotion.

When the minister gains control, he says, 'What I'm about to preach,
you will never remember. What you have just seen, you will never
 forget.'

'Be careful how you live. You may be the only Bible some people will
 ever read!'

[RecipesAndMore] Food Trivia

2010-01-10 Thread Jan
Food folklore suggests that New Year's celebrations should include pork
and sauerkraut to ensure good luck in the coming year.

In the American South, eating black-eyed peas and greens (such as
collards) on New Year's Day is considered good luck: the peas symbolize
coins and the greens symbolize paper money. They are a key ingredient in
Hoppin' John (peas, rice and pork) and part of African-American soul
food.

A German New Year's tradition is to eat herring at the stroke of
midnight to bring good luck for the New Year.

In Austria, suckling pig is the traditional dinner for New Year's Day
and is said to symbolize good luck. Often the New Year's table also is
decorated with miniature pigs made of marzipan, maple sugar or
chocolate.

[RecipesAndMore] A Simple Explanation Of Baseball

2009-11-26 Thread Jan
A Simple Explanation of Baseball

This is a game played by two teams, one out the other in. The one that's
in, sends players out one at a time, to see if they can get in before
they get out. If they get out before they get in, they come in, but it
doesn't count. If they get in before they get out it does count.

When the ones out get three outs from the ones in before they get in
without being out, the team that's out comes in and the team in goes out
to get those going in out before they get in without being out.

When both teams have been in and out nine times the game is over. The
team with the most in without being out before coming in wins unless the
ones in are equal. In which case, the last ones in go out to get the
ones in out before they get in without being out.

The game will end when each team has the same number of ins out but one
team has more in without being out before coming in.

[RecipesAndMore] Shipwrecked

2009-11-23 Thread Jan

Shipwrecked

A voyaging ship was wrecked during a storm at sea and only two of the
men on

it were able to swim to a small, desert like island.

The two survivors, not knowing what else to do, agree that they had no
other

recourse but to pray to God.

However, to find out whose prayer was more powerful, they agreed to
divide
the territory between them and stay on opposite sides of the island.

The first thing the first man prayed for was food.

The next morning, the first man saw a fruit-bearing tree on his side of
the
land, and he was able to eat its fruit.

The other man's parcel of land remained barren.

After a week, the first man was lonely and he decided to pray for a
wife.

The next day, another ship was wrecked, and the only survivor was a
woman
who swam to his side of the land.

On the other side of the island, there was nothing.

Soon the first man prayed for a house, clothes, more food.

The next day, like magic, all of these were given to him.

However, the second man still had not a thing.

Finally, the first man prayed for a ship, so that his wife and he could
leave the island.

In the morning, he found a ship docked at his side of the island.

The first man boarded the ship with his wife and decided to leave the
second

man on the island. He considered the other man unworthy to receive
God's
blessings, since none of his prayers had been answered.

As the ship Was about to leave, the first man heard a voice from Heaven
booming, Why are you leaving your companion on the island?

My blessings are mine alone, since I was the one who prayed for them,
the
first man answered.

His prayers were all unanswered, and so he does not deserve anything.

You are mistaken! the voice rebuked him.

He had only one prayer, which I answered. If not for that, you would
not
have received any of my blessings.

Tell me, the first man asked the voice, what did he pray for that I
should owe him anything?

He prayed that all your prayers be answered.

For all we know, our blessings are not The fruits of our prayers alone,
but
those of another praying for us.

When Jesus died on the cross, he was thinking of you!

GOD SAW THE WORLD AT IT'S WORST AND GAVE US HIS BEST - JESUS CHRIST

4. Pillowcases hold twice as much as plastic grocery bags and three

8. If a group of children gathers at the door, sometimes it's best to be
in front so you won't have to wait, but sometimes it's better to be the
last one: you might get two pieces of candy for being patient.

9. It's always better to choose your candy than to have someone else
choose it for you.

10. When parents chaperone, moms say Be careful and remember your
manners. Dads say Wha'dya get?

11. Know your shortcuts. Slide through hedges, jump over gutters, and

12. Dads stay out later than moms.

13. Do not show your teacher what you have in your lunch bag the day

[RecipesAndMore] The Mother Load Layered Cookie Bars

2009-10-19 Thread Jan

The Mother Load Layered Cookie Bars

Layer 1: Sugar Cookie

1 Roll of Pillsbury Sugar Cookie Dough

Preheat oven to 350 degrees F. Press sugar cookie dough into bottom of a
9×13 inch baking dish that's been lined foil and sprayed with cooking
spray.

Layer 2: Double Chocolate Chip Cookie

(the recipe below makes double what you'll need for the bars, use extra
for cookies)

1 cup butter
1 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
1 3/4 cups flour
1 1/4 cups cocoa powder (I used Hershey's Dark Chocolate Cocoa Powder) 2
tsps. baking soda 1/4 tsp. salt 1 1/2 cups chocolate chips

In a large bowl, cream together the butter and sugars until light and
fluffy. Slowly add eggs and vanilla until well combined. In another
bowl, combine the flour, cocoa, baking soda and salt. Slowly add to wet
ingredients then stir in chips. Layer 1/2 the recipe over sugar cookie
layer, pressing gently.

Layer 3: Peanut Butter Cookie

1 Cup creamy peanut butter
1/2 Cup granulated sugar
1 egg

Place all ingredients into a bowl and mix until combined. Press over
chocolate cookie dough.

Layer 4: Chocolate Chip Cookie

(the recipe below makes double what you'll need for the bars, use extra
for cookies) 2 sticks softened butter 3/4 Cup granulated sugar 3/4 Cup
brown sugar 2 eggs 1 Tablespoon pure vanilla 2 1/2 Cups all purpose
flour 1 teaspoon baking soda 1/2 teaspoon salt 1 bag chocolate chips

Make sure oven is preheated to 350 degrees F. In a stand or electric
mixer cream the butter and sugars until well combined. Beat in eggs and
vanilla until combined. Place flour, baking soda and salt into a large
bowl; mix to combine. Slowly add to wet ingredients along with chocolate
chips. Spoon 1/2 of the dough evenly over peanut butter cookie dough but
don't press, just leave uneven. Bake for 35-45 minutes or until center
of dough is cooked mostly through. Edges will be brown. I covered pan
with foil during the last 15 minutes of baking. Let cookies cool
completely. Lift out of pan with edges of foil. I cut off 1/2 inch edges
and just used softer centers, but do as you wish. Edges are crispier.
Drizzle top with 1/2 Cup melted chocolate chips if desired.
*Note: You can layer dough and refrigerate until ready to bake.
8 large bars (if you cut off edges), 12 bars (if you keep edges)

Betsy asked for a natural spaghetti sauce with the flavor of the jar
sauces. I can't remember when I last used a jar sauce, but here is one
that my son makes for all his pastas and it is great, IMO. I have a more
elaborate one with meat but this is quick and easy:

Chef Dave's Tomato Sauce (for pasta)

Olive oil
Onion (chopped finely)
Garlic
Crushed tomatoes (large tin)
Fresh basil (chopped finely)
Salt pepper
Chili flakes (red pepper flakes)
Honey (taste sauce and add if sweetness needed)

Oil in heated pan, add onions and garlic and fry briefly. Add tomatoes
and basil, salt and pepper and chili flakes. Cook for a few minutes and
taste. If there is a sharp taste add some honey and stir well (taste to
get the balance you want). No quantities are shown as he cooks enough
for the meal or makes more and freezes the remainder. If you can find
canned tomatoes from Italy the flavor is superior.

[RecipesAndMore] Ten Secret Fast Food Items

2009-10-01 Thread Jan

Your mission, if you choose to accept it, is to seek out covert items
at fast food chains around the country. Be warned, this mission includes
very real dangers such as hardening arteries and skyrocketing
cholesterol. But we know you won’t let us down. We’ve compiled a list to
get you started.
1. In-N-Out Burger’s “secret menu” isn’t so secret these days – in fact,
they’ve posted it on their website. But in case you’re not in the habit
of surfing fast food sites, here’s the skinny on the rather un-skinny
items: ordering something “Animal Style” at In-N-Out means you’re going
to get it with lettuce, tomato, a mustard-cooked beef patty, pickles,
extra spread (it’s sort of Thousand-Islandy) and grilled onions. You can
even get your fries Animal Style. “Protein Style” is a burger wrapped in
a lettuce leaf instead of a bun. A Grilled Cheese is two slices of
American cheese, lettuce, tomato and spread on a bun (grilled onions if
you so choose). And you can get just about any combo of meat and cheese
that you want if you order it like you’re ordering lumber: 3×3 gets you
three beef patties and three slices of cheese, 4×4 gets you four of
each, and so on. It doesn’t stop there – one gluttonous patron requested
a 100×100 at an Las Vegas store a couple of years ago. One item not
listed on the website secret menu: the Flying Dutchman, which is two
slices of cheese sandwiched between two patties, hold the bun.
2. If you’re at Starbucks and in need of just a little caffeine, don’t
worry – there’s a tiny option for you. It’s the Short size, and they
don’t advertise it. It’s like a little baby cup of coffee. It also comes
in handy when you’re scrounging for change and don’t have enough for a
tall… not that that has ever happened to me.
3. It’s a good thing we don’t have Jamba Juice here in Iowa, because I
would be all over candy-inspired smoothies. Because it’s considered a
health-food chain, Jamba Juice doesn’t officially list these on their
in-store menus, but Mighty Foods assures us that the secret flavors
exist. The ones they confirmed with the company’s headquarters include
Strawberry Shortcake, White Gummy Bear, PBJ, Various flavors of
Starbursts, Fruity Pebbles, Push-Up Pops, and Skittles. Other
tantalizing flavors that are rumored to exist: Chocolate Gummi Bear,
Apple Pie, Sourpatch Kid, Tootsie Roll, Chocolate-covered strawberries,
and Now and Later.
4. Chipotle has a whole secret menu that is limited only by your
imagination – they have a store policy that says that if they have the
item available, they will make it for you. Things that have been tested
include nachos, quesadillas, taco salads and single tacos. Some stores
are testing out quesadillas as a regular menu item, however, so maybe
someday soon you won’t need a super-secret handshake to order one.
5. If you’re at Wendy’s and you’re really hungry – like,
three-patties-just-won’t-cut-it hungry, go ahead and order the Grand
Slam, which is four patties stacked on a bun. It’s also known as the
Meat Cube. Gross.
6. Several places, including McDonald’s and In-N-Out, will serve you the
Neapolitan milkshake. It’s just what it sounds like – chocolate, vanilla
and strawberry shakes layered in a cup. This gives me a great idea… I
wonder if they would make me a mint-chocolate shake when they have the
Shamrock Shake in March. Hmmm. Picture from Flickr User Mrjoro.
7. Feeling a little health-conscious at Popeye’s? If you are, you really
should have gone somewhere else. But there’s a little hope for you –
ordering “naked chicken” will get you breading-free poultry. The word is
that this is on the menu at some Popeye’s, but not all of them, although
it is an option at all of them.
8. Like Chipotle, Taco Bell will make you just about anything within
reason as long as they have the ingredients for it. Since most of the
food at Taco Bell is made out of the same basic items, that means you
can probably ask for most discontinued items and get them. One “secret,”
though, is that they have a not-advertised green chili sauce at most
locations, and apparently it’s excellent.
9. Some Subways will still make you the popular pizza sub from the ‘90s.
Once the chain decided to make their focus healthy eating, the pizza sub
disappeared from the menu in most places (the word is that Canadian and
Mexican Subways still offer them on a regular basis). But if you ask,
lots of places will still make it for you. Be warned, though – Jared
would not approve of the nine slices of pepperoni and copious amounts of
cheese slathered in marinara sauce.
10. This one might be my favorite. At Fatburger, you can order a
Hypocrite – a veggie burger topped with crispy strips of bacon.

[RecipesAndMore] Perfect Brownies

2009-09-19 Thread Jan

Perfect Brownies
2/3 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
4 oz bittersweet or semisweet chocolate
2 oz unsweetened chocolate
10 tbsp (1 stick plus 2 tbsp) butter
1-1/4 cups sugar
2 tsp pure vanilla extract
3 large eggs
3/4 cup chopped walnuts, pecans, macadamia nuts or pecans toasted,
optional Preheat the oven to 325 degrees and set a rack in the lower
middle level. Grease or spray an 8-inch square baking pan with nonstick
cooking spray. Fit a 16-by-8-inch piece of aluminum foil in the pan and
up two sides. This makes it easy to lift the cooked brownie out of the
pan. Grease or spray the foil with nonstick cooking spray. In a small
bowl, whisk the flour, salt and baking powder together. Set aside. Melt
the chocolates and butter in a medium bowl, over simmering water or in a
double boiler. You can also melt them in a microwave. Whisk in the sugar
and vanilla. Whisk in the eggs one at a time, fully incorporating each
one before adding the next. Continue to whisk until the mixture is
completely smooth and glossy. Add the dry ingredients and whisk until
just incorporated. Stir in the nuts, if using. Pour the batter into the
prepared pan, smoothing the top. Bake until a cake tester or toothpick,
inserted in the center, comes out with wet crumbs, 35 to 45 minutes.
Important: If the toothpick comes out clean, the brownies are
overcooked. Cool the brownies on a wire rack in the pan, for five
minutes. Use the foil handles to pull the one big brownie out of the pan
and turn it out upside down on the rack to cool, at least three hours.
Cut into sixteen squares and serve.

[RecipesAndMore] Intense Chocolate Torte

2009-09-19 Thread Jan

Intense Chocolate Torte
Crust:
1 cups pecans, toasted and coarsely chopped
1 cup Graham cracker crumbs, about ten double crackers
2 tbsp sugar
4 tbsp, 1/2 stick, unsalted butter, melted, plus more, if needed
Filling:
1 pound semisweet chocolate, chopped
1 cup whipping cream
6 large eggs beaten
3/4 cup sugar
1/3 cup all-purpose flour

To make the crust: Preheat the oven to 325 degrees. In a medium bowl,

to hold the crust together. Press the mixture on the bottom and halfway
up the sides of a 10-inch springform pahn.
To make the filling: In a medium saucepan,, heat the chocolate and cream
over low heat, until the chocolate melts. Remove from the heat and set
aside. In a stand mixer or large bowl, combine the eggs and flour. Beat
for 10 minutes, less if you're beating by hand, or until thick and lemon
colored. Fold 1/4 of the egg mixture in to the chocolate mixture. Then
fold the remaining egg mixture into the chocolate mixture. Pour the
filling into the crust. Bake for about 45 minutes, until puffed around
the edge and halfway to the center. Let cool on a wire rack for 20
minutes. Then remove the sides of the pan. Let cool for 4 hours before

[RecipesAndMore] Sticky toffee Pudding With Chocolate Chips And toffee Sauce

2009-09-19 Thread Jan

Sticky Toffee Pudding With Chocolate Chips And toffee Sauce
Sauce: 1-1/2 cups packed dark brown sugar
8 tbsp butter, 1 stick
1/2 cup heavy cream

Pudding:
6 oz pitted dates, 8 ounces unpitted
1/4 tsp baking soda
3/4 cup boiling water
6 tbsp, 3/4 stick, butter, softened

1/2 tsp salt, if using unsalted butter
3/4 cup packed dark brown sugar
2 tsp pure vanilla extract
2 large eggs, beaten
1-1/4 cups all purpose flour
2 tsp baking powder
7 oz bittersweet chocolate, coarsely chopped
2 tsp instant espresso powder, optional
Preheat the oven to 350 degrees. Butter a 9-inch round cake pan with
2-inch sides and line the bottom with a round of parchment paper.
To make the sauce:
Combine the butter, brown sugar and cream in small saucepan, over
medium heat. Stir until the sugar is completely dissolved and the sauce
is bubbling. Pour half of the sauce into the prepared cake pan, and set
the rest of the sauce aside to serve with the pudding.
To make the Pudding: Put the dates and baking soda in a small bowl, and
add the boiling water. Set aside. Cream the butter (Add the salt if
using unsalted butter) brown sugar
and vanilla together in a large bowl, until white and fluffy. Beat in
the eggs, a little at a time, sprinkling in a tablespoon of flour when
you have added half the eggs. This helps stop the batter from curdling.
Mix in the dates and their soaking water. Sift the remaining flour and
the baking powder over the mixture. Then fold in gently but thoroughly.
Stir in the chopped chocolate and espresso powder, if using. Pour the
batter into the pan. Bake until the top is golden and firm, and the
sides have shrunk away slightly from the pan, 50 to 60 minutes. Let cool
in the pan, on a wire rack, for about fifteen minutes. Run a knife
around the edge of the pan and turn it out onto a serving plate. Reheat
the remaining sauce until bubbling. Cut the warm pudding into wedges.
Spoon the sauce over the pudding.

[RecipesAndMore] Re: Remarks Made on CBS Sunday

2009-09-18 Thread Jan

I like this. I've read some more of Ben stein's stuff. He's good. I was
at church and didn't hear him this Sunday morning.

Subject: [RecipesAndMore] Remarks Made on CBS Sunday

Subject: Remarks from CBS Sunday Morning

(everyone should read!)

Read it and do with it whatever you feel like

doing. Have a blessed day,

The following was written by Ben Stein and

recited by him on CBS Sunday Morning

Commentary.

My confession:

I am a Jew, and every single one of my ancestors

was Jewish. And it does not bother me even a little bit

when people call those beautiful lit up, bejeweled trees,

Christmas trees.. I don't feel threatened. I don't feel

discriminated against. That's what they are: Christmas trees.

It doesn't bother me a bit when people say, 'Merry

Christmas' to me. I don't think they are slighting me or getting

ready to put me in a ghetto. In fact, I kind of like it It shows

that we are all brothers and sisters celebrating this happy time

of year. It doesn't bother me at all that there is a manger scene

on display at a key intersection near my beach house in

Malibu . If people want a crèche, it's just as fine with me as is the

Menorah a few hundred yards away.

I don't like getting pushed around for being a Jew, and I don't

think Christians like getting pushed around for being Christians.

I think people who believe in God are sick and tired of getting

pushed around, period. I have no idea where the concept came

from that America is an explicitly atheist country. I can't find it in

the Constitution and I don't like it being shoved down my throat.

Or maybe I can put it another way: where did the idea come

from that we should worship celebrities and we aren't allowed

to worship God as we understand Him? I guess that's a sign that

I'm getting old, too. But there are a lot of us who are wondering

where these celebrities came from and where the America we

knew went to.

In light of the many jokes we send to one another for a laugh,

this is a little different: This is not intended to be a joke; it's not

funny, it's intended to get you thinking.

Billy Graham's daughter was interviewed on the Early Show

and Jane Clayson asked her 'How could God let something like

this happen?' (regarding Katrina) Anne Graham gave an extremely

profound and insightful response. She said, 'I believe God is deeply

saddened by this, just as we are, but for years we've been telling

God to get out of our schools, to get out of our government and to

get out of our lives. And being the gentleman He is, I believe He has

calmly backed out. How can we expect God to give us His blessing

and His protection if we demand He leave us alone?'

In light of recent events... terrorists attack, school shootings, etc. I

think it started when Madeleine Murray O'Hare (she was murdered,

her body found a few years ago) complained she didn't want prayer

in our schools, and we said OK. Then someone said you better not

read the Bible in school. The Bible says thou shalt not kill, thou
shalt

not steal, and love your neighbor as yourself. And we said OK.

Then Dr. Benjamin Spock said we shouldn't spank our children when

They misbehave because their little personalities would be warped and

we might damage their self-esteem (Dr Spock's son committed suicide).

We said an expert should know what he's talking about. And we said OK.

Now we're asking ourselves why our children have no conscience, why

They don't know right from wrong, and why it doesn't bother them to kill

strangers, their classmates, and themselves.

Probably, if we think about it long and hard enough, we can figure it
out.

I think it has a great deal to do with 'WE REAP WHAT WE SOW.'

Funny how simple it is for people to trash God and then wonder why the

world's going to * Funny how we believe what the newspapers say, but

question what the Bible says. Funny how you can send 'jokes' through
e-mail

and they spread like wildfire but when you start sending messages
regarding

the Lord, people think twice about sharing. Funny how lewd, crude,
vulgar

and obscene articles pass freely through cyberspace, but public
discussion

of God is suppressed in the school and workplace.

Are you laughing yet?

Funny how when you forward this message, you will not send it to many on

your address list because you're not sure what they believe, or what
they

will think of you for sending it.

Funny how we can be more worried about what other people think of us
than

what God thinks of us.

Pass it on if you think it has merit. If not then just discard it.
no one will know you did. But, if you discard this thought process,
don't sit back and complain about what bad shape the world is in.

[RecipesAndMore] Re: Just a Hi

2009-09-14 Thread Jan

Thanks, Sherry. I know what you mean. It seems like there aren't enough
hours in a day. I was in the trial for the new digital talking book
players. Then I decided to get Dsl a month ago. And then I decided last
week to get a victor reader stream, because I don't think the players
are very portable. I got it Friday and I love it already.

Hi Folks,

Well this is just to say hello.

My life has been pretty busy lately--I don't know how or why this is
always the case. Either I don't know how to manage my time, I'm
disorganized, I have too many irons in the fire,... who knows.

The fact is that I have recipes that I want to post but I have to type
them into the computer in order to do that. And then something always
takes that time.

Perhaps this is agood thing. I will--or at least should--never be
bored.

Well just wanted you all to know that I'm thinking about you and praying
for you.

Sherri

[RecipesAndMore] Food Trivia

2009-09-06 Thread Jan

Chuck Wagons
Charles Goodnight is said to have devised the first 'chuck wagon', which
he put together from an Army wagon in the 1850s or 1860s. It was fitted
with various shelves and compartments for storing food, cooking
equipment, eating utensils, etc. It also had room for medical supplies
(very limited), scissors and a shovel, for the 'coosie', 'cookie' or
'gut robber's' duties included acting as doctor, barber and burying the
dead. Cooks were also paid double the dollar a day the cowhands earned.

[RecipesAndMore] Taste Test

2009-07-31 Thread Jan

American Cheese
Published July 1, 2006. From Cook's Illustrated.

We found a distinct difference between gooey goodness and just plain
slimy.

products tested (listed alphabetically)
Borden American Cheese
Kraft Deli Deluxe White Slices
Kraft Singles
Land O' Lakes American White
Land O' Lakes American Yellow
Sara Lee American Slices
See Product Comparison Chart

We admit it. Many of us in the test kitchen top our burgers
with-gasp-American cheese. Defined as a process cheese product with a
minimum requirement of 51 percent actual cheese (the rest is mostly
emulsifiers and stabilizers), American cheese can range dramatically in
color, flavor, and texture. Coming to terms with our guilty pleasure, we
decided to taste four widely available brands (in the guise of grilled
cheese sandwiches) to find out which one we liked best, including both
yellow and white varieties where available.

Three brands had candidates that rated well for cheesy flavor. Not
coincidentally, cheese culture (live bacteria added to milk to spur the
formation of cheese curds) was higher on their ingredient lists than on
those for the two contestants that didn't taste anything like cheese.
And while across the board the textures were slightly rubbery, we found
that there was a distinct difference between gooey goodness (the first
group) and just plain slimy (the second group). As for color, it came
down to a matter of personal preference.

See the Results
Winner
 Sara Lee American Slices
In a grilled cheese sandwich, Sara Lee not only has cheesy flavor but
also avoids the slimy texture other candidates have.

Recommended
  Sara Lee American Slices
This cheese received high ratings for its cheesy flavor, but tasters
agreed its texture was slightly rubbery.

Recommended
  Land O' Lakes American Yellow
This cheese's slightly rubbery texture was redeemed by its prominent
cheesy flavor.
 $6.29 for 1 pound
Recommended
  Land O' Lakes American White
Testers enjoyed the cheesy flavor, but not the slightly rubbery texture.
 $6.29 for 1 pound
Recommended
  Kraft Deli Deluxe White Slices
According to testers, the cheesy flavor outweighed the slightly rubbery
texture.
 $5.29 for 16 ounces
Not Recommended
  Borden American Cheese
Testers agreed the slimy product didn't taste anything like cheese.
 $3.99 for 12 ounces
Not Recommended
  Kraft Singles
Testers found these slices slimy, and agreed it didn't taste anything
like cheese.

[RecipesAndMore] Sunflowers And Radiation

2009-07-27 Thread Jan

On This Day:
Monday July 27, 2009
This is the 208th day of the year, with 157 days remaining in 2009.

Fact of the Day: sunflower
Sunflower heads consist of 1,000 to 2,000 individual flowers joined
together by a receptacle base. The large petals around the edge of a
sunflower head are individual ray flowers which do not develop into
seed. A sunflower is ready to harvest when the back portion of the head
turns brown. Floating rafts of sunflowers were used to clean up water
contaminated by the 1986 accident at the Chernobyl nuclear plant in the
former Soviet Union. The roots of the sunflower plants removed 95% of
the radioactivity in the water by pulling contaminants out of the water.

Delicious Coffee

After making morning coffee in a drip pot, turn off the coffee maker and
pour the coffee into a thermos-style insulated pitcher. This saves you
on the electricity it takes to keep the coffee warm, and also eliminates
the yucky taste that the coffee develops as it reheats.

She is a two-year-old mix of lab and pit bull. She is much smaller than

She is a little doll and I think we will be very happy with her.
We adopted her from the same animal shelter where we got Sam. Her
former owner had to give her up because he was going into the Navy.
There is a lot for all of us to to learn but I am hoping it will work

Hello Everyone,
Our dog, Samuel Morse Leggett, or Sam, passed away Thursday, July 2,
2009. He was a lab mix, mostly yellow lab. He was with us since October
16, 1999 when we adopted him from the Macomb County Animal Shelter when
he was 3 or 4 years old, so he must have been 13 or 14 when he passed.
He was having breathing problems and our son took him to the vet. They
gave him oxygen and medication for pain. However, they said it would be
very expensive for tests and X-rays, and the treatment may not even work
because of his age and condition.
We will miss him. very much.

[RecipesAndMore] Taste Test

2009-07-03 Thread Jan

Hot Dogs
Published April 1, 2007. From Cook's Country.

Americans spend $1.5 billion on store-bought hot dogs. We compiled a
20-person tasting panel to determine where that money should be spent.

products tested (listed alphabetically)
Ball Park Beef Franks
Boar's Head Skinless Beef Frankfurters
Healthy Choice Low Fat Beef Franks
Hebrew National Beef Franks
Johnsonville Stadium Style Beef Franks
Kahn's Bun Size Beef Franks
Kayem Deli Jumbo Beef Hot Dogs
Nathan's Famous Beef Franks
Oscar Mayer Beef Franks
See Product Comparison Chart

See the Results
Winner
 Nathan's Famous Beef Franks
Our tasters heralded Nathan's dogs for their meaty, hearty, robust
flavor and firm, craggy texture.
Product Tested Quantity Price*
Highly Recommended
  Nathan's Famous Beef Franks
Our tasters heralded Nathan's dogs for their meaty, hearty, robust
flavor and firm, craggy texture-all qualities that separate them
from the overprocessed competition. Juicy, crunchy, salty, yum, said
one happy taster.
 8 dogs $4.99 for 1 pound
Recommended
  Johnsonville Stadium Style Beef Franks
Tasters appreciated the girth and richness of these franks, which were
the largest in our tasting. Their flavor was described as big and meaty
but not hot-doggy, with a strong spice blend. Texture was deemed
good and firm.
 6 dogs $2.99 for 14 ounces
Recommended
  Hebrew National Beef Franks
These franks scored especially well for their crunchy, nice and
juicy texture and garlicky, spicy, beefy, and smoky flavor. One
gushing taster called them almost perfect-well seasoned and juicy.
 7 dogs $4.69 for 12 ounces
Recommended with Reservations
  Oscar Mayer Beef Franks
While some tasters liked Oscar Mayer's smoky, strong flavor, these
franks lost points for being ridiculously salty, mushy, and tasting
like a mixed-meat hot dog, not an all-beef one.
 10 dogs $3.99 for 1 pound
Recommended with Reservations
Kayem Deli Jumbo Beef Hot Dogs
Nothing fancy, like a hot dog should be, said one pleased taster. A
little greasy, but with good flavor, said another. Less glowing
comments included bland and sour, rubbery filling, and several
references to a strange and sweet aftertaste.
 8 dogs $3.99 for 1 pound
Recommended with Reservations
  Ball Park Beef Franks
One taster called these dogs classic but unremarkable. Negative
remarks included mushy, strange sweetness, and a mention of
unpleasant chewy membranes.
 8 dogs $3.99 for 1 pound
Not Recommended
  Boar's Head Skinless Beef Frankfurters
Tasters found something amiss with these rubbery, artificial-looking
(too red) hot dogs. While the flavor was deemed beefy, the chewy
texture was a big turnoff. Smells a little like wet socks, complained
one member of our panel.
 10 dogs $4.29 for 1 pound
Not Recommended
  Kahn's Bun Size Beef Franks
The general consensus was that these dogs taste like they have a lot of
filler and have a very processed texture. Most tasters complained
about too much salt and no meat flavor or texture. Like sour, salty
bologna, said one critic.
 8 dogs $3.99 for 1 pound
Not Recommended
Healthy Choice Low Fat Beef Franks
Our tasters didn't think these franks looked (strange dark color) or
tasted (livery undertones, plasticky) like hot dogs. The
gummy-mushy-grainy texture drew serious complaints.
 8 dogs $3.49 for 14 ounces
*Prices subject to change.

[RecipesAndMore] Another Prayer Request From lora

2009-07-02 Thread Jan

I just got a call from Lora. Her dog Sam died today. He was about ten
years old or a bit more. She's understandably upset and with all that's
been happening to her family lately, it's more difficult. Also, Sam's
death was sudden.

Then she got some idea I thought I was better than her which was not
true. I had just gotten married and was learning to cook and other
things. I guess she was not able to do things independently and just
because I t talked about it a lot because that was what I was trying to
do in my middle 20's she dropped me because she didn't think I realized
that we all have different abilities and how we learn and stuff. Oh
well, I just let her go because at the time I didn't have the time to
argue with people and I figured if she felt that way maybe I didn't need
the negativity around me.
I can't remember how Kitty and I lost touch.

[RecipesAndMore] Taste Test

2009-06-19 Thread Jan

Hamburger Buns
Published July 1, 2006. From Cook's Illustrated.

We were surprised by the differences in flavor and texture, even when we
limited our tasting to supermarket buns.

products tested (listed alphabetically)
Pepperidge Farm Premium Bakery Rolls
Sunbeam Hamburger Buns
Wonder Hamburger Buns
See Product Comparison Chart

In a tasting of supermarket hamburger buns, we were surprised by the
differences in flavor and texture. Two brands were so airy that they all
but deflated if grasped too indelicately, while heartier brands stood up
well to wet condiments.

But the dealbreaker was size: Of the products we tested, some measured
less than 3 1/2 inches across-a tight fit for most patties. Our favorite
had a generous 4 1/2-inch diameter, hearty texture, wheaty taste, and
the least amount of sugar in the lineup.

[RecipesAndMore] Re: Does Anybody Have a Recipe for ...

2009-06-09 Thread Jan

I'll do a search if no one does by the time I get to it.

Subject: [RecipesAndMore] Does Anybody Have a Recipe for ...

Hi Folks,

Perhaps someone out there could help me.

I know I've seen a recipe like this somewhere but am too lazy right now
to do a search.

A friend and I were talking last week about some orange balls (cookies).
I think they are made with orange juice, powdered sugar, vanilla wafers
...

If any of you has such a recipe I would really appreciate it if you
could pass it along.

And, of course, if none of you do, I will get out of this lazy mood
sooner or later and probably do some searches over the weekend.

Not really too lazy--just pulled in too many different directions and
can't really make time for it until then.

Thanks,

Sherri

[RecipesAndMore] Super Chocolate Icebox Cookies And I want All 42

2009-06-03 Thread Jan

Super Chocolate Icebox Cookies
Servings: 42
1 1/4 pounds bittersweet chocolate, chopped
3/4 cup unsalted butter
1 1/3 cups sugar
4 large eggs
1 tablespoon vanilla extract
3/4 cup all-purpose flour
12 ounces semisweet chocolate chips
Line an 8 by 8-inch pan with a double layer of plastic wrap. Melt
chocolate
and butter in heavy very large saucepan, stirring constantly over low
heat
until smooth. Remove from heat and cool slightly (you don't want chips
to
melt when you add them.) Whisk in sugar, then eggs and vanilla. Stir in
flour, then chips. Pour dough into prepared pan, smoothing evenly.
Wrap in plastic and refrigerate overnight or up to 3 days. Using large
sharp
knife, cut dough into 3 even bars, about 2 1/2 by 8 inches each. (Can be
made ahead. Wrap each bar in plastic and place in freezer bag and freeze
up
to 2 weeks. Thaw in refrigerator overnight before continuing.)
Preheat oven to 350 degrees F. Line heavy baking sheets with parchment.
Slice bars crosswise into 1/2-inch thick slices. Place on baking sheets,
spacing about 2 inches apart. Bake until puffed in center and wrinkled
on
top, about 15 minutes. Cool in pans. Store airtightly.

Is orange Tango the same as Tang? I had Tang at college too. In fact,
my brother Dan loved to drink it in his baby bottles and was almost
three when my parents finally just stopped giving the bottles to him.
We still laugh about how he used to cry I want Tang in a bottle! We
did have it several year ago. They also had grape Tang.

I've heard of orange tango come to think of it.

It's a powdered orange drink. The astronauts took it into space in the
sixties. I lived on the stuff when I was in college and haven't had it
since.
