In my version, there are at least two ways to add a Profile. 

   1. go to Options | Preferences | Viewer/Editor | 
  Viewer/Editor Profiles. Click the "Add" button to add a 
  new profile. 
  
   2. go to Options | Preferences | Viewer/Editor | 
  Message Viewer/Editor. Click the "New..." button to add 
  a new profile.  
  
In either case, the only setting when creating the profile (apart from
the profile name) is a list of Character Sets with checkboxes. I have
just one Profile, with no character sets ticked.

At the menu location mentioned in 2., there is also a "Profile:" 
drop-down menu, which I have always left at "< Default >".

I created the "profile" some years ago, as something stopped working
when the setting was introduced. I can't remember what, but following
the advice of somebody on this list to create the profile solved it
for me.

Well, yes and no.  It's probably the differences in versions which
prevent me from seeing your directions
OPTIONS/PREFERENCES/VIEWER/PROFILE LAYOUT.  In my version I have
OPTIONS/PREFERENCES/VIEWER-EDITOR PROFILES which displays an empty box
because I have no profiles, and no idea how to create any.

In any event, since you (and presumably everyone else) sees my
messages in whatever font they have set for viewing, I guess I
shouldn't worry about it.  It just annoys me that I can't change it on
this end.

You click on the link - this takes you to the item in webmail - you
then decide to Receive or to Delete. Receive then downloads the big
email.
