In my version, there are at least two ways to add a Profile. 1. go to Options | Preferences | Viewer/Editor | Viewer/Editor Profiles. Click the "Add" button to add a new profile. 2. go to Options | Preferences | Viewer/Editor | Message Viewer/Editor. Click the "New..." button to add a new profile. In either case, the only setting when creating the profile (apart from the profile name) is a list of Character Sets with checkboxes. I have just one Profile, with no character sets ticked. At the menu location mentioned in 2., there is also a "Profile:" drop-down menu, which I have always left at "< Default >". I created the "profile" some years ago, as something stopped working when the setting was introduced.
