I've been playing with this since ios6 came out, and I haven't yet been able
to work out what default does, any suggestions?

When you are in the list, just flick up or down, and the roter automatically
says delete or default. It isn't a special setting. It is automatic.

Thanks, jen, I found out how it worked soon after writing my last message! 
Unless you want to delete all messages at the end of reading, I think it's 
probably not that useful myself.

I didn't change a setting I just swiped down or up when on a message and the 
delete option was announced. What I can't figure out is what it means after 
delete and it says default.

I assume that if in a list of mail messages, double tapping default
would open the message. I think the default behavior changes depending
on what app you are in, such as default for voicemail would play the
message.

Default opens the message when you're in the mail app.

Personally, I love this feature. I get a ton of email and with the
preview pane enabled it's a much faster way to go through a lot of
messages.

I love this feature too. I just deleted about 50 or 60 text messages
with the 1 finger flick up and double tap method. I had not deleted
them before since the process seemed a little long, with hitting the
edit button, double tapping twice on what you wanted to delete and
then confirming your choice. This 1 finger method will definitely come
in handy and be well used. I did notice that after deleting 30 or so
messages, the rodar had changed to a different value, but it was a
matter of setting it back on the Action option and the 1 finger flicks
continued.

And you can also do the single finger flick down to delete Reminders and
Favourites from your Favourites in the Phone app. Unfortunately it does not
work to delete calls in the Recent Calls log, maybe an oversight as that
would be super handy.

I'm rather disappointed that Apple hasn't improved the filtering in the
Recent Call list. Still only All and Missed, why can't they add
Incoming and Outgoing and then allow one to delete just the calls you
are currently looking at, e.g. if I filter for Missed calls and have 10
calls in my list I'd like to be able to delete those 10 calls and not the
entire call log. I was even able to do this on my old Windows 6.1 smartphone
4 years ago.

Someone said you could enable it in the rotor settings and voiceover but I 
didn't see if there either. I'm curious to know this also.

Thank you Jonathan.  I assume that once this setting is set, it remains set to 
the selected setting until it is chaged, irrespective of whether the user reads 
messages from the same or a different thread?  Thanks for your help.

No, the default action returns after you execute the function. So let's say
you've deleted a message thread by swiping down then double tapping. The
action will then return to default, which would mean that if you double
tapped on another message thread, it would open it, not delete it. This
approach avoids accidental deletion for the most part.
