I'm not entirely sure what happened, but having got some assistance
from one of the JEdit authors, it appears that I've somehow got IBM
Java on here as well as other versions. Since JEdit seems to be the
only thing that's been broken, I'm reluctant to do a full
reinstallation to try to sort out the mess, it's a program I only use
for one specific task, and it's easier and quicker for me to write a
small FreePascal utility to do the job. If I find something else
that's broken, that may be a different matter.

Solved:

I opened the application menu (whiskermenu) properties and changed the
format to Bionic (from Whatever it was before - I forgot).

Update:  I realized last night that this is actually the menu layout
from 12.04 (IIRC).

It must be somewhere in the config files, but I saved mine and
overwrote them with the defaults, and the menu is still in the 12.04
format - list of first level options, no split panel.

As much as I didn't like that format when was experimenting with Mint
18, it has grown on me and it works, unlike the 12.04 apps which are
obsolete and fail.

Not helpful at all.  If you're not using Xubuntu, why are you on an
email list to discuss Xubuntu features, uses, etc.?

Many parts of the older menu don't work.  The 16.04 settings manager
app is still there and it doesn't work on some the Desktop settings at
all (didn't come up on a desktop right-click - I ran
xfdesktop-settings and now it's working better, but the menu is still
the old 16.04-style menu).

How do I reset the menu back to the new one?  It looks more like the
Mint menu than the old one.  I have my issues with that, but I
actually like it better now that I've been using it at work for a few
weeks.

I'm guessing it's one of my old config files, but I have no idea which
one or what to tweak/replace in it.

  some other virtualization software - and then install Windows on
  VirtualBox and then install iTunes on Windows. I have done this in
  the past when I used to have an iPhone and it works fine for
  syncing your library but playing videos on iTunes itself within
  the virtual machine was not pretty.
You can, of course, install software and music/videos directly
  from the iPad without using iTunes at all. Updates to iPad should
  also be downloadable over the air as well.
