I don't know of any USB sound cardes, but have you tried the Coolsoft virtual MIDISynth? That one is pretty easy to set up and all you need to do is get some different soundfonts after configuring it.

The only thing I find difficult to use is the MIDI mixer. Configuration is very much accessible. Although if you try out the new version 2 you may have to OCR the window to get to the different tabs.

Aha. The problem with custom sounds is spacing. I was putting a space before the file name. No spaces and it works. The bitrate doesn't seem to matter as long as it's wav.

I would use something like GoldWave or Audacity to record the MIDI sound coming through your sound card if you want to record Microsoft's GM. You would have to make sure anything else that might send sounds (skype, etc) was turned off while you record though. Not sure
