All Linux distributions should be accessible as you really will use SSH. About wich distro you may need to use, it depends. While arch is nice and up to date, I don't know anyone who use it in a production server. If you are talking abou testing, you can take CentOS

I would personally recommend using arch. It’s quite easy to set up and use, and arch servers generate somekick ass pings.

Since servers largely use linux's CLI, I don't see a distribution not working. I think the ones historically used the most are the more widely known ones, However.Ubuntu, Arch, fedora, etc.I run a linux server myself, and use ubuntu. Which seems to work, as well
