Have you considered Aftershokz? Note the odd spelling. Theyre bone conduction headphones, they go round the back of your head and loop over your ear a bit like some headphones might except instead of cups the ear is open and theres a thing in front

I hate to say this Dark but it may be your power button. Are you using a case that has a cover over the power button like the Otterbox ones do? When I had an Otterbox Defender I found Id damaged the power button because the rubber lump over the place

Connect using a cable and try again to update using iTunes. If that doesnt work, theres a guaranteed way to update, which involves erasing everything on your phone. Turn phone off, and connect to computer with iTunes while holding down the home
