We have a Cisco 2921 running 15.2(3T); We are seeing PAUSE OUTPUT incrementing on the device, and every time it does, our users experience pretty nasty jitter and silence on VOIP calls. The link is 1000BaseLX with a 100MB committed rate; we rarely see more than 10-15MB of output or input traffic

The short answer is... no. Cisco said they will never release a 64-bit version of their VPN Client. However, Anyconnect has a 64-bit variant, however, this requires a separate license for the ASA... There is a third-party VPN client for 64-bit that works fine: http://www.ncp-e.com/en.html

Well, the Cucumber is ok, it combines CCM 6.X and CUC 6.X in a single box, the downside is you can't integrate with AD and you can only have 5 remote sites. Also, since it is a single server, there is no redundancy, so you may need a big, fat router for SRST depending on how many users you have.
