Clipboard does in fact work. The degree of direct access available varies by
browser. If the browser in question does not provide a means of granting access
to the clipboard, you will need to use the clipboard interface in the Guacamole
menu:

Recent changes to Chrome (version 66+) add an API which allows applications to
request access, and support for that API was recently added via GUACAMOLE-559.
Additionally, IE versions 10 and 11 provide access via an older version of the
clipboard API which Guacamole has supported for some time (GUACAMOLE-24). Older
versions of Chrome can also be used with the older API through a third-party
extension:
