I always freeze left over mashed potatoes in those throw away containers and
heat them up in the microwave. We do that quite often.

I truly don't think you would have to have a 4 pound roast for this to work. I
think a 3 pound one would be just fine. I just got the recipe, so I haven't
tried it. Let me know what you decide.
