Thanks for your findings Marius. I can reliably reproduce the problem in
a clean and up-to-date focal VM with the following steps:
- snap install chromium
- snap run chromium # color emojis are rendered correctly
- snap refresh chromium --beta
- snap run chromium # color emojis are gone
