Justin,
What is your config value for mail.server in dspace.cfg ?
If your mail server is not the same one as DSpace server, the sendmail log
will not be recorded in DSpace server. You have to look for it in
your mail server as specified in dspace.cfg.

You'd have to either take a copy of the db along or allow access to the
production db. If, that is, you want titles to show up in the list of items
accessed instead of handles.
